Doesn’t everyone love Philly Cheesesteaks? I know we do! So I decided to try these flavors in a healthier version! These easy to make Philly Cheesesteak Stuffed Peppers are packed full of flavor. With meat, cheese and lots of seasoning, everyone will be asking for a second serving!
Diversity of Meat
When choosing my beef ingredient, I went with stew meat that I trimmed into smaller pieces. Normally I would have used shaved beef. Unfortunately, I could not find it at the time I was making this recipe. You can also take a small steak and cut it up into bite size pieces. Whatever is easiest for you!
Cheesesteak Stuffed Peppers
Ingredients
- 4 large Red or Green Bell Peppers *halved and seeded
- 1 lb Stew Meat, cut into small pieces *chopped taco meat or a small steak cut into bite size pieces can also be used as a substitute
- 1 tbsp Vegetable Oil
- 7 oz Shiitake Mushrooms, sliced *you can substitute sliced cremini mushrooms
- 1 large Shallot, chopped
- 1 tbsp Minced Garlic
- 1/4 cup Worcestershire Sauce *add more if you want a little more flavor.
- 1 cup Brown Rice, cooked according to package
- Salt/Pepper, to taste
- 8 oz Sliced Provolone
- Chopped fresh parsley for garnish
Instructions
- Preheat oven to 325 degrees. Place peppers in a large baking dish and bake until tender. Approximately 30 minutes.
- In a large skillet, heat oil on medium high. Add garlic, shallot and mushrooms. Season with salt and pepper. Cook for 6 minutes until soft. Add steak and Worcestershire Sauce. Cook for another 3 minutes until meat is brown on all sides. Add cooked rice and mix until well combined.
- Once pepper halves are cooked, heat broiler. Add 1 slice of provolone to the bottom of each pepper. Then fill the pepper halves with meat and rice mixture. Add an additional slice of cheese to top of peppers. Broil until golden brown, approximately 3 minutes. Garnish with fresh parsley and enjoy!
