Bacon Ranch Potato Salad Recipe
Oh my! This Bacon Ranch Potato Salad Recipe turned out FABULOUS and I just had to share! I am the type who takes things from the refrigerator and throws it together. Especially if I need to use something up! Well, I had thick cut bacon that needed to be used and a half bag of red potatoes. That and the fact that we were having hamburgers that night for dinner, gave me the idea to whip up some potato salad and it turned out better than I could have imagined! Seriously, who doesn’t love ranch and bacon flavors? Combine them and you have a fabulous combination for a tasty potato salad the entire family is sure to enjoy! For the green onions in this recipe, I actually grew them using my own Urban Garden!
Bacon Ranch Potato Salad Recipe
Ingredients
- 8-10 Red Potatoes, washed and cubed
- 1 packet Dry Ranch Dressing Mix *Hidden Valley is the best!
- 1 1/2 cups Mayonnaise *you can use more or less to suit your taste
- 5 slices Thick Cut Bacon
- 1/2 cup Sliced Green Onions
- 1/2 cup Sliced Celery Pieces
- Fresh Ground Black Pepper to taste
Instructions
- Preheat oven to 350 degrees.
- Place bacon on a piece of parchment paper in a shallow baking pan. Cook for about 15-20 minutes. I like my bacon pretty crispy so I cook it for a little longer. Once it is cooked, remove the pieces from the pan and place on a plate with a paper towel. Be sure to pat both sides of the bacon with a paper towel! The paper towel will absorb all the grease so your salad is delicious and not greasy! Once it is cool enough to handle, chop it up into small pieces and set aside!
- Fill large pot with water and bring to a boil. While water is heating up, clean and cut your red potatoes into cubes. I make mine smaller, so they cook faster. Once water is boiling, carefully add the potato cubes and boil until soft, but not soggy. I boiled mine for 20-25 minutes and the pieces were easy to pierce with a fork!
- Mix mayonnaise and dry ranch dressing together in a small bowl. Set aside.
- Once the potatoes have cooked, strain them and put them in a large bowl. Let them cool down for about 30 minutes before adding additional ingredients.
- Once the potatoes have cooled down add the mayo mixture, bacon pieces, green onions and celery pieces. Mix until thoroughly combined! Add salt and pepper to taste and mix again if you would like! Otherwise, refrigerate for approximately 2 hours.
- Mix up the salad prior to serving and add more mayonnaise if that is to your liking, garnish with extra bacon bits and green onion slices! Then enjoy!

In conclusion I have a great pineapple express hamburger recipe that is sure to be a family favorite! Or another fun hamburger topping alternative is what we call the Whiskey River Burger! Add white cheddar cheese, barbecue sauce, French’s Dried Onion pieces and bacon! This is a new favorite in our house!
