Banana Chocolate Chip Muffins
Who doesn’t love the smell of fresh banana chocolate chips muffins baking in the oven? I know my family and I do! But there are a couple secrets to making the best banana chocolate chip muffins, do you want to hear them? The first secret is to use over ripe bananas! I always joke that bananas come to our house to die. And it is a true statement. I will buy a cluster of 5 or 6 bananas and at least 2 never get eaten and turn black. But on the positive side, I then use them to bake with! The other secret to the best banana chocolate chip muffins? Use MILK chocolate chips, an entire bag! Don’t use semi-sweet or skimp on using only a cup or two, use the whole darn bag. Hold a cup or two out of the batter so you can sprinkle them on top! Ingredients
2-3 Ripe Bananas (if you want more of a banana flavor, use 3.)
2 Eggs
1 24 oz bag of Milk Chocolate Chip Morsels (I prefer to hold 1-2 cups of chips aside to sprinkler on top. Tollhouse and Ghiradelli are my go to brands too!)
2 cups Flour
1 teaspoon Baking Soda
1 tsp Vanilla (real vanilla, don’t use imitation!)
3/4 cup White Sugar *I have reduced mine to 1/4 cup and they are still just as good! Workng on making some recipes more healthy!
1/2 cup Butter
3 tablespoon of Sour Cream (you can use light sour cream too!)
1/2 cup Pecan chips *optional
Directions
Preheat oven for 350 degrees
You can either line the muffin wells with paper liners or use a non-stick cooking spray on each. Makes 18 muffins.
Mix all ingredients together, except the chocolate chips. Once all the ingredients have been mixed well, add all the chips except 1 cup.
Spoon into muffin baking tray until each well is 3/4 of the way full. Then sprinkler the remaining chocolate chips morsels on top!
Bake for 20 minutes or until a toothpick comes out clean when inserted in the center!! Then enjoy!
