Summer Berry and Fig Salad
Spring and summer is a great time to enjoy all the fresh fruits and veggies! But especially berries! This summer berry and fig salad can be used as a side dish or put some protein (I used shredded chicken!) and make it a main dish!The Vinaigrette
I originally got the idea for this salad when I went to lunch with a dear friend at Nordstrom Cafe. They had a champagne vinaigrette with vanilla bean paste. I could not recreate the champagne vinaigrette, however, I did create fabulous vanilla bean vinaigrette that makes this salad fabulous!Summer Berry and Fig Salad
Looking for an easy, light dinner idea? Or need a great side dish for a barbecue or get together? This Summer Berry and Fig Salad is perfect for any occasion!
Ingredients
- 4 Cooked, chopped and Cooled Boneless Chicken Breast *optional! This recipe can be a side dish too!
- 1 bag Spring Mix Salad Greens
- 1 pint Raspberries
- 1 pint Blueberries
- 1 8 oz Container of Crumbled Goat Cheese
- 1 cup Honey Roasted Pecan Pieces *I get mine in the produce area of my grocery store.
- 12 Chopped Dried Figs *I would prefer fresh figs, but I couldn't find any!
- 1/2 cup Prosseco Wine Vinegar *vinaigrette
- 1 1/2 cup Canola Oil *vinaigrette
- 1 tsp Minced Garlic *vinaigrette
- 1/2 tsp Salt *vinaigrette
- 2 tbsp Sugar *vinaigrette
- 1/2 tsp White Pepper *vinaigrette
- 1 tbsp Dijon Mustard *vinaigrette
- 2 tbsp Vanilla Bean Paste *vinaigrette
Instructions
- Mix all the vinaigrette ingredients together! I used a salad dressing mixer to combine mine. It needs to be thoroughly combined!
- Layer your ingredients! Spring mix on the bottom, then the berries, figs, goat cheese, pecan pieces and chopped chicken on top!
- Pour the desired amount of vinaigrette over your salad and enjoy! A smidgen of fresh ground pepper is also a good way to top off this salad if you desire!
