Burrito Bake Recipe
If you are familiar with my blog, you know I am always looking to create easy, yet delicious recipes the entire family will enjoy! This Burrito Bake with tortillas is no different. Whether you want to call it Burrito Lasagna or a Baked Burrito Casserole, it is extremely easy to make and an all-around winner!
Easy Dinner Recipe
This is a recipe with only 30 minutes needed for preparation and 30 minute bake time. It is also extremely economical. And with food prices rising on a daily basis, this dish can serve up to 8 people. My hubby and I had two days worth of leftovers. And I think it was even better the second time around!
Variations
I used ground beef when making this recipe. However, you can use chicken, pork or make it vegan. Just swap out your protein for what suits your family best. And if you don’t like flour tortillas, use corn. OR if you don’t like tortillas at all, use crescent rolls. If using crescent rolls, I would not layer it. I would just roll out on the floor of the baking dish and pinch your seams so nothing “leaks” and burns the bottom of your baking dish.
Burrito Bake Recipe
Ingredients
- 1 lb Ground Beef
- 1 envelope Taco Seasoning
- 1/2 medium Onion ,chopped
- 1 14.5 oz can Diced Tomatoes *I used fire roasted
- 1 package Flour Tortillas *I used the burrito size
- 1 7 oz can Diced Green Chiles *use less if you like less "spice"
- 1 can Black Beans
- 2 cups Mexican Blend Shredded Cheese
- Optional Toppings: Shredded lettuce, chopped tomatoes, sour cream, guacamole, chopped green onions
Instructions
- Preheat oven to 350 degrees. Grease 13x9 inch baking dish and set aside.
- In a large skillet, cook and crumble ground beef over medium heat until there is no more pink. Drain excess fat from pan. Add chopped onion, beans, tomatoes, chilies and taco seasoning. Cook for 5-10 minutes until onions are translucent and ingredients are heated through.
- Cover bottom of greased baking dish with tortillas. I had to cut some in half to cover entire bottom. Pour half your meat mixture over the top. Sprinkle with shredded cheese.
- Place another layer of tortillas over the meat mixture. Pour remaining meat mixture evenly over tortillas and sprinkle remaining shredded cheese on top. Place last layer of tortillas on top of the meat mixture. You can add shredded cheese to the top if you wish, but not necessary.
- Cover with tin foil and bake for 30 minutes. For a crispy top, remove foil for last 10 minutes of cooking.
- Serve with garnishments of guacamole, sour cream and shredded cheese! Then enjoy!

As with all my recipes, add, remove or adjust ingredients that suit your families tastes. This is another stick to your ribs, food for the soul type of dish! So feel free to put your own mark on it! This Burrito Bake Recipe has definitely become a favorite in our household and I hope it becomes one in yours too!
