Chicken Parmesan, Kelly style!
I love to cook. And I have a habit of creating my own recipes or finding recipes I like, then adapting them so my family and I LOVE them! This is one of those recipes. I have adapted this over the years to make a healthier version, but it is still delicious! It is a 2 step cooking process. I fry the outside of the chicken breast in a pan first, make sure it is crispy! You do not want a soggy outside! Then I finish cooking the chicken in the oven with sauce, parmesan and mozzarella cheeses! And oh my, is it scrumptious! Chicken Parmesan is one of our all time favorite recipes!
Chicken Parmesan
Preheat oven to 350 degrees. Pour half of Italian sauce in bottom of 9″ x 13″ baking dish
4-6 chicken breast (if thick I cut the breast in half, length wise, to reduce cooking time)
1-2 cups of Progresso Italian Bread Crumbs (my favorite, but any brand would work!)
Coconut Cooking Oil
2 eggs, whipped with a fork and 1/4 cup of milk
1 jar of your favorite Italian sauce (or make your own, I try to keep things simple!)
1/4 cup Shredded Parmesan Cheese
1/2 cup Shredded Mozzarella Cheese
First, dredge chicken in the egg/milk mixture. Once chicken is covered, dip in bread crumbs. Make sure the chicken is thoroughly covered with bread crumbs! Be careful when placing in hot coconut oil in frying pan. Cook for about 2-3 minutes on each side, bread crumbs should be crunchy. Place in baking dish lined with Italian sauce. Repeat until all chicken pieces are done. Cover chicken with the rest of Italian sauce. Then sprinkle the Parmesan and Mozzarella cheese. Bake at 350 degrees for 20-25 minutes or until done! Then enjoy! I always serve a great bottle of wine and garden salad! And yes, the picture with this recipe is straight from my dinner table! I hope you love it as much as my family and I do!
