Chicken Sheet Pan Meal

This was one of the simplest and most delicious meals I have ever made! I created this chicken sheet pan meal with left over ingredients I needed to use.  So I decided butternut squash, chicken and green beans is what I used to create a yummy one pan meal!  I hope you love it as much as my family did!  So much so that there were no leftovers!

Chicken Sheet Pan Meal

Ingredients

  • 6 Boneless Chicken Breast *if you have thick pieces, slice in half for faster cooking
  • 1 cup Panko Crumbs
  • 2 tbsp Lemon Juice *or juice from 2 lemons
  • 2 tbsp Lemon Pepper Seasoning
  • 1 tbsp Parsley
  • 1/4 cup Shredded Parmesan
  • 1 large Butternut Squash *peeled, cubed
  • 2 tbsp Olive Oil
  • 2 tbsp Rosemary Herb Seasoning Mix
  • 3 cups Fresh Green Beans, cut up
  • 8 tbsp Butter, melted
  • 6 slices Bacon, cooked and crumbled

Instructions

  • Preheat oven to 400 degrees. Spray baking sheet with on-stick cooking spray and set aside. 
    Note: entire cooking time is approximately 40 minutes or until cubes are tender, chicken is cooked and green beans are still crisp!
  • In a large bowl added olive oil, rosemary herb seasoning mix and butternut squash cubes.  Mix thoroughly until cubes are coated.  Place down one third of the baking sheet.  Place in oven for 10 minutes.
  • While butternut squash starts to cook, in a seperate bowl, combine panko crumbs, lemon pepper seasoning, parmesan and parsley.  In a second bowl, combine 6 tbsp melted butter and lemon juice.  Mix each bowl until the ingredients are well combined.
  • Dredge each piece of chicken through the melted butter and then through the panko crumb mixture.  Make sure both sides are coated and press crumb mixture onto each piece.  Take baking pan out of the oven and place the chicken down the center of the pan.  Cook chicken and butternut squash for 20 minutes.
  • Mix cut up green beans, 2 tbsp melted butter and bacon pieces together.  After chicken cooks for 20 minutes take out pan and place green beans down remaining third of the pan and cook for another 10 minutes.  Enjoy!

I used Pampered Chefs Rosemary Seasoning Blend for the butternut squash cubes!  It is one of the best seasoning blends I have tried and I use it in many of my recipes!  For $7 it has high quality ingredients and a little goes a long way!!!

    This is absolutely brilliant. There’d be SOOOO many fewer dishes and the prep would be so much less. Definitely going to give this a go.
