One of the easiest lunches I can take on the road during the week when we are working is a homemade sandwich. Unfortunately, there are not many “health bread alternatives“. But I have some suggestions that may help when you need a fast and easy meal prep idea, but want to keep it as healthy as possible!
Is White Bread Healthy?
White bread off the grocery store shelf is probably one of the worst choices you can make for your family. Most white breads are full of refined grains, and very little fiber. There are some exceptions but most are not made in a health conscious manner. Check out this article on the lack of health benefits of bread HERE.
Healthy Substitutes for Bread
I will be the first to admit, I love bread and just about any carb induced food I can get my hands on. But in the spirit of eating healthier than we were I have tried several alternatives to typical bread. Pitas is the first, and if I am being completely honest, they are a little dry for me. Decent flavor, but not enough substance in my opinion. What we do LOVE are Orowheat Sandwich Thins. I buy the 100% whole wheat sandwich thins and they are delicious! With 30 grams of whole grains and 4 grams of fiber, they are a wonderful alternative to any traditional breads. No trans fats and less than 1 gram of saturated fats. And with only 140 calories per roll, it is an exceptional alternative for sandwiches or hamburgers. I promise you will love it!
But lets take a look at this wonderful meal prep recipe for a healthy, tasty lunch that will leave you satisfied and full!
Hummus and Vegetable Sandwich
Ingredients
- 6-10 slices Fresh Turkey Breast *I buy Boar's Head brand.
- 1 tub Roasted Red Pepper Hummus *you can use any flavor of hummus or make your own. This is just my preference
- ½ cup Roasted Red Peppers, drained and cut into strips
- ⅓ cup Feta Cheese
- 2 Mini Cucumbers, sliced **I use mini cucumbers to avoid seeds. Just slice and eat!
- 1 box 100% Whole Wheat Sandwich Thins
- 6 pieces Fresh Lettuce, *I used Butter Lettuce leaves
Instructions
- Assemble all the ingredients on each sandwich thin according to your liking! If you want a protein, put it on! If not, leave it off! Either way it will be a delicious alternative!
- I store each sandwich in a Ziploc bag! When you take it make sure you have it in a cooler with an ice or put it in a refrigerator until you are ready to eat!
Conclusion
I hope you love this heathy bread alternative meal prep recipe! There are so many options! I have done ham slices with tomatoes, cucumber slices, lettuce and honey mustard sauce. We have also gone vegetarian and not had anything other than cucumber slices, hummus and cheese! I have even used shredded carrots with a tuna packet and lettuce! No matter how you make it, it will be delicious!
