Hello Fresh Firecracker Meatballs Recipe
Now that my hubby and I are empty nesters, we have been getting two Hello Fresh meals per week since August. And I have to say, they are yummy, convenient and most importantly, easy to make! The last recipe I shared from Hello Fresh was the Saucy Burrito Bowl Recipe! It was a hit with my hubby and I! Now I want to share the Firecracker Meatball Recipe which has become another favorite! It is truly delicious and you can modify the recipe to make it a little “hotter” or milder. Depending on what you like!
What is Hello Fresh?
Hello Fresh is a meal kit service delivered to your door! So less food shopping for me! Which I love! They give you step by step instructions and the meals are normally ready in 40 minutes or less. They also have vegetarian and “gourmet” meals that cost a little more. But honestly, the regular meals are great. I have bought some of the gourmet meals too. Not sure they are worth the extra cash though! But you can make that decision for yourself if you try it! Hello Fresh: Firecracker Meatball Recipe
Ingredients
- 4 Scallions
- 1 tsp Roasted Ginger *you can also use fresh ginger, minced
- 4 tbsp Mayonnaise
- 2 tbsp Sour Cream
- 4 tsp Honey
- 4 tbsp Soy Sauce
- 2 tsp Sriracha
- 1 cup Jasmine Rice
- 20 oz Ground Beef
- 1/2 cup Panko Crumbs
- 12 oz Green Beans, ends trimmed
- 1 tsp Korean Chili Flakes
Instructions
- Pre-heat oven to 425 degrees.
- Trim and thinnly slice the scallions. Seperate whites from greens.
- In small pot combine rice and 1 1/2 cups water with a pinch of salt. Bring to a boil and then reduce heat to a simmer and cover. Cook 15-18 minutes or until rice is tender.
- While rice cooks, in a large bowl combine the ground beef, panko crumbs, scallion whites, ginger and 1.5 tbsp of the soy sauce. Pepper to taste. Once thoroughly combined, form 20-24 1 1/2 inch diameter meatballs and place on large cooking sheet. I used parchment paper on my baking sheet rather than spraying with oil.
- Toss green beans onto the empty side of baking sheet and drizzle with a touch of olive oil and salt/pepper to taste.
- Bake on top rack for 14-16 minutes. Meatballs should be cooked with no pink.
- While everything is cooking, make the firecracker sauce! In a medium bowl combine mayonnaise, sour cream, honey, 4 tsp soy sauce and sriracha to taste. You can make this hotter or milder depending on how much sriracha you add.
- Fluff rice with fork and season with salt and pepper to taste and drizzle with extra soy sauce is desired!. Divide between four bowls and carefully place meatballs on top of rice with green beans and drizzle the firecracker sauce on top. Garnish with green scallion tops and Korean Chili Flakes. Then enjoy!

As a side note, the firecracker sauce would be good with breaded chicken cutlets too! I think it can be used with so many other dishes!

Firecracker meatballs is a family requested dinner at my house. I follow the recipe as directed except:
I add a dollop of peanut butter to the firecracker sauce! YUM!

Just a heads up that the ingredient list says 4 tablespoons of soy sauce without specifying anything about some needed to be reserved, but for the sauce it only states 4 teaspoons. I used 4 tablespoons when making the sauce when referring to the ingredient list and had to toss a whole bowl out. It was a bummer especially since I have doubled this recipe.

I’m very sorry you read the recipe incorrectly. It states within the instructions how much to use and to drizzle any remaining towards the end of the recipe.
