We have had a nasty heat wave in Colorado this past week. And even with central air conditioning, the house would still be warm in the late afternoon. So the last thing I wanted to do was to heat up the house even more with the oven! This is how I ended up making Instant Pot Parmesan and Shrimp Risotto Recipe!
Is the Instant Pot Seasonal?
I love not only the Instant Pot, but also the Slow Cooker. Normally, when I think of these two kitchen tools I think of cool fall evenings or cold winter nights! But I enjoy using them in the summer as they don’t heat up the house! So not only are we staying cool, but we are not putting a strain on the air conditioning unit! But lets get started on this yummy Instant Pot meal!
Instant Pot Parmesan and Shrimp Risotto
Equipment
- Instant Pot
Ingredients
- 4 tbsp Unsalted Butter
- 1 half Small White Onion, chopped
- 1 tbsp Minced Garlic
- 1 1/2 cups Basmati Rice
- 1/2 cup White Cooking Wine
- 3 cups Chicken Broth
- 1 1/2 cups Grated Parmesan Cheese
- 2 cups Frozen Peas
- 8 oz Sliced Mushrooms
- 16 oz Peeled and Devined Raw Shrimp
- Salt/Pepper to taste
Instructions
- Place stainless steel pot in your Instant Pot. Press the "saute" button. Add the butter.
- When the butter is melted, add the onion and minced garlic. Cook 3-5 minutes or until garlic is fragrant and onion is translucent. Stir occasionally so nothing sticks.
- Add the rice and stir continuously for 2 minutes.
- Add the wine and cook for about 1 minute. Scrap any stuck rice from the bottom or sides of the pot.
- Stir in the chicken stock. Add peas, mushrooms and salt/pepper to taste.
- Place lid on Instant Pot and lock into place. Hit CANCEL to discontinue the saute function. I have a "RICE" function on my Instant Pot. Push the Rice function and it will cook at high for 10 minutes. If you don't have a rice button cook on high for 10 minutes.
- When you are done cooking, quick release the steam and turn off your Instant Pot.
- Stir in the shredded Parmesan cheese and the shrimp! Stir for 2-4 minutes and the residual heat will cook your shrimp so it is perfectly cooked and tender! Garnish with more shredded cheese and enjoy!
Variations
I am sure there are several variations you can do with this recipe that would be tasty! You can add chunks of chicken prior to cooking instead of shrimp. Roasted asparagus pieces could also be used instead of the peas! When I post recipes I always work hard to make sure it is easy AND delicious! But sometimes you want something a little different, and this basic recipe can be adjusted to whatever you and your family enjoy!
Additional Instant Pot Tricks and Tips!
- Unless your recipe instructs otherwise, always have a t least 1 cup of liquid when cooking under pressure. Any less will not generate enough steam.
- Never fill pot more than two-thirds full to allow enough room for steam to build. Or more than half for rice or beans to give them room to expand.
- Cook times start when pot reaches full pressure, not from the moment at which the program button was pressed. So be sure to account for that time when deciding when to start your meal preparations!
- When switching between cooking programs, always press the CANCEL button before selecting a new function.
- Before using the saute function, let the Instant Pot get hot, which will take about 5 minutes. But don’t put the lid on while it’s heating or at any time during the saute function.
