Potato Leek Soup is something my hubby will order anytime he sees it on a menu when we go out to eat. And it is something I never tried to make because I thought it would be too difficult. I am happy to admit, I was wrong. Our favorite restaurant would not give me the recipe for their soup, but they did give me the main ingredients! So with the guidance of their ingredient list and my joy in working with my Instant Pot or Slow Cooker, I created this hearty, yummy Instant Pot Potato Leek Soup! And my hubby thinks it is even tastier than the restaurant version!
Easy Potato Leek Soup Variations
This recipe is easy enough to do stove top. However, I love the ease of using the Instant Pot. I used bacon in my recipe. However, you can make this vegetarian by not using any meat. Or use small chunks of ham rather than bacon.
Another variation can be to garnish with sour cream, fresh parsley or green onions. I used green onions and pieces of bacon to garnish mine.
Potatoes are another easy variation. I used small red potatoes. With the the skins on. I never make potatoes that need to be skinned any more. But you can also use golden potatoes or regular baking potatoes that are peeled. Whatever suits your tastes!
If you would like a chunkier soup, remove some of cooked potatoes pieces prior to blending then add back into the soup.
Instant Pot Potato Leek Soup
Equipment
- 1 Pressure Cooker
Ingredients
- 4 tbsp Butter
- 3 Leeks, cut off hard green tops and roots. Wash thoroughly and chop.
- 10 oz Thick Cut Bacon, chopped into bite size pieces
- 1 medium Yellow Onion, diced
- 2 tbsp Minced Garlic
- 1 cup White Wine
- 5 cups Vegetable Broth *you can also use chicken broth
- 4 lbs Baby Red Potatoes, unpeeled and quartered
- 1 tsp Dried Thyme
- 1 tsp White Pepper
- 1 tsp Dried Parsley
- 1 tsp Dried Rosemary
- 1 tsp Dried Oregano
- 4 oz Shredded Gouda *you can use another mild cheese or cheddar
- 4 oz Cream Cheese, cubed
- Salt to Taste
- Chives, chopped for garnish
Instructions
- Turn on the Instant Pot to saute. Add butter and heat until melted and bubbling. Then add the leeks and saute for 8-10 minutes. Remove leeks and set aside.
- Add the bacon, onion and garlic. Saute for about 5 minutes.
- Add the white wine and simmer for 1 minute. Scrap the bottom of the pot to remove any browned bits from bacon and butter. Add broth, potatoes and spices. Stir well, secure lid and move the valve to the sealing position.
- Hit cancel, then press manual or high for 8 minutes. Quick release when done.
- After carefully removing the lid stir in the cream cheese and shredded cheese. Use an immersion blender and blend until completely smooth. Stir in the leeks and garish with chives and bacon pieces. Serve with warm crusty bread!
Additional Instant Pot Tricks and Tips!
- Unless your recipe instructs otherwise, always have a t least 1 cup of liquid when cooking under pressure. Any less will not generate enough steam.
- Never fill pot more than two-thirds full to allow enough room for steam to build. Or more than half for rice or beans to give them room to expand.
- Cook times start when pot reaches full pressure, not from the moment at which the program button was pressed. So be sure to account for that time when deciding when to start your meal preparations!
- When switching between cooking programs, always press the CANCEL button before selecting a new function.
- Before using the saute function, let the Instant Pot get hot, which will take about 5 minutes. But don’t put the lid on while it’s heating or at any time during the saute function.
