Instant Pot chicken recipes are always amazing! But I have to say, this Instant Pot Sweet and Sour Chicken is easy AND delicious! I have always loved sweet and sour chicken but never really made an attempt to make it as ordering it from the local restaurant seemed better. But now that I have my own recipe and it is ready in less than 40 minutes, I will never order take out again!
Easy Sweet and Sour Chicken Variations including Baked
This recipe can be modified several different ways. You can either do a “dump recipe” or saute the chicken first. If you decide to saute the chicken, dust it with cornstarch prior to cooking in a small amount of oil. You can also add fresh ginger, minced garlic or sliced onions. Or sprinkle with sesame seeds! I choose to garnish with chopped green onions. But no matter how you decide to cook it, it is a wonderful meal!

Instant Pot Sweet and Sour Chicken
Ingredients
- 1 16 oz Bottle of Catalina Dressing
- ½ cup Honey
- 2 tbsp Apple Cider Vinegar
- 2 Red or Green Peppers, seeded and diced *I used red peppers
- 2-3 lbs Boneless Chicken Breast, cut up into bite size pieces
- 2 tbsp Cornstarch
- 1 20 oz can Pineapple Chunks, drained
Instructions
- Add the Catalina Dressing, honey and apple cider vinegar to the Instant Pot. Mix until well combined.
- Place bell pepper chunks on top and then chicken pieces. Secure the lid and move the valve to the seal position. Press manual and cook on High for 8 minutes. Be sure to quick release when done.
- While the chicken is cooking, combine the cornstarch and cold water and mix vigorously until smooth. Use 2 tbsp of water with cornstarch.
- Once chicken has cooked, quick release the steam and place chicken on a plate or a bowl. Add cornstarch mixture to the mixture and stir constantly. Hit "cancel" then hit saute. When the mixture starts to boil, turn off. Add the pineapple chunks and chicken. Let cool 5 minutes so sauce thickens and then ladle over cooked rice. Then enjoy!
Additional Instant Pot Tricks and Tips!
- Unless your recipe instructs otherwise, always have a t least 1 cup of liquid when cooking under pressure. Any less will not generate enough steam.
- Never fill pot more than two-thirds full to allow enough room for steam to build. Or more than half for rice or beans to give them room to expand.
- Cook times start when pot reaches full pressure, not from the moment at which the program button was pressed. So be sure to account for that time when deciding when to start your meal preparations!
- When switching between cooking programs, always press the CANCEL button before selecting a new function.
- Before using the saute function, let the Instant Pot get hot, which will take about 5 minutes. But don’t put the lid on while it’s heating or at any time during the saute function.
