Lemon Pepper Chicken Pasta
This recipe came out of nowhere. I literally had some ingredients I needed to use and decided to try something new. And it turned out to be so delicious I decided I needed to share this Lemon Pepper Chicken Pasta Recipe with my readers. I love it when that happens!!! This is certainly a keeper! I can’t wait to hear how you enjoy it!
Accommodating Your Own Tastes
Anytime I create a recipe I try to keep in mind what others may like, or not like. For example, in this recipe I LOVE lemon pepper seasoning. So I added 3 tablespoons as I like a strong lemon pepper taste. If you want it milder, feel free to adjust how much you add! I am a firm believer that every recipe can be modified. Especially when it comes to seasonings! So always feel free to experiment with seasonings and adjust to what you and your family like!
Lemon Pepper Chicken Pasta Recipe
Ingredients
- 3 medium Boneless Chicken Breast
- 1 medium Zucchini
- 12 ounces Spaghetti
- 1 tbsp Minced Garlic
- 1 Lemon *or 1 tbsp of lemon juice
- 4 tbsp Sour Cream
- 2 tbsp Chicken Stock Concentrate
- 1/2 cup Shredded Parmesan Cheese *extra for garnish
- 3 tbsp Lemon Pepper Seasoning or Rub *use more or less depending on how strong of a flavor you want.
- 1 tbsp Butter
- Salt/Pepper to taste *optional
Instructions
- Bring a pot of water with a touch of salt and a drizzle of olive oil to a boil. Once boiling, add pasta and cook for 9-11 minutes. Be sure to stir more than once while cooking to prevent sticking. Once cooked, drain pasta but reserve 1 cup of pasta water and set aside.
- While water is boiling, trim ends off zucchini and cut length wise down the center. Then cut each half into 1/2 inch slices. Trim any fat off chicken and cut each breast into bite size pieces.
- In a large frying pan heat a drizzle of olive oil and add chicken pieces. Cook stirring regularly for 5-7 minutes. Then add minced garlic, lemon pepper seasoning and zucchini pieces. Cook for another 4-6 minutes until chicken pieces are cooked through and zucchini is browned and softened. Set aside.
- Set aside pasta once it is finished cooking and add reserved pasta water to pot used to cook the spaghetti. Cook on medium heat and add chicken stock and lemon juice. If you have a fresh lemon, add some lemon zest too! Reduce heat and simmer for 1-2 minutes Remove from heat.
- Add 1 tbsp of butter, 1/2 cup shredded Parmesan cheese and 4 tbsp of sour cream to the sauce. Stir until melted and combined.
- Combine sauce, pasta, chicken and zucchini mixture in one bowl or pot. Mix thoroughly and serve! Serve with additional shredded Parmesan cheese on top and with a lemon wedge or fresh parsley!
Conclusion
This is a “super easy” pasta recipe for any day of the week. And it makes enough to have leftovers! Which I love! So I hope you try making it for your family and they love it as much as we did! Lemon Pepper Chicken Pasta never tasted so good!
