Flourless Oatmeal Bars

Flourless Oatmeal cakesFlourless Oatmeal Bars

These oatmeal bars are an awesome addition to any recipe box!  They are moist and have tons of flavor!  To be used as a snack, breakfast bar or an energy supply on a hike.  It is easy and convenient to pack and take or eat at home!  This is a Pampered Chef recipe and I have not had to make any modifications, as I am known to do!!!! I hope you enjoy these oatmeal bars as much as we do!  Please click here if you would like to see more recipes!

Ingredients

1 can chickpeas, drained and rinsed

2 eggs

1/2 cup creamy peanut butter

1 tsp vanilla extract

2/3 cup white chocolate morsels, divided

1/2 cup quick cooking oats

1/3 cup packed brown sugar

1/2 tsp baking soda

1/4 tsp salt

Instructions

Preheat oven to 350 degrees.

Spray muffin tin wells with non-stick cooking spray or use paper cups to prevent sticking

Place chickpeas and eggs in a food processor and blend well.  (mixture will not be smooth!)

Transfer mixture to a bowl if needed and add the peanut butter and vanilla.  Mix well, then add 1/3 cup of the morsels, all the oats, cranberries, brown sugar, baking soda and salt.  Mix until combined.

Divide mixture evenly among the 12 cupcake wells. Bake for 16-18 minutes or until wooden pick inserted comes out clean.

Place remaining 1/3 cup morsels in a bowl and microwave on HIGH for 1 minute, stirring every 15 seconds or until melted.  Transfer to a small resealable bag.

Trim a small corner from the resealable bag and drizzle over oatmeal bars.  Let cool and enjoy!!

      It is delicious! The only thing I have found, if you use muffin liners, the muffins will stick to the liner unless completely cooled!
