It is amazing what you find while standing on line at the grocery store waiting to check out. And this is the first time I was happy about my wait! I discovered a blog and magazine called Hungry Girl. It is probably the best magazine I have bought in a while and the recipes are amazing! So for my third meal prep recipe I am sharing a Salmon Caesar Salad Recipe from Hungry Girl. It comes with a great twist! It is definitely a new favorite in our house!
Reasons to start meal prepping
My daughter and I started meal prepping several weeks ago in an effort to eat healthier. Our dinners were always healthy. However, our breakfast and lunches especially needed a make over. Starbucks is a favorite of mine and Chick fil a. Seriously, who doesn’t love God’s chicken? LOL Not only was I spending a small fortune each week on eating out, but I wasn’t making healthy choices in what I was eating.
Hence, meal prepping! This has helped in keeping me healthy and my weight is getting under control again. I let myself go some over the winter and I am paying the price now. But with intermittent fasting and meal prepping, I have been on a steady path of losing weight!
Salmon Caesar Salad
Ingredients
- 4 4 oz Raw Skinless Salmon Filets *I seasoned with salt and pepper only
- 3 cups Romaine Lettuce, chopped *1 head of Romaine should be enough
- 1/4 cup Chopped Sun Dried Tomatoes *bagged or rinsed
- 1/4 cup Shredded Parmesan Cheese
- 1 bottle Light Caesar Dressing *Or make your own!e
- 1/2 Red Onion, chopped *optional
Instructions
- Preheat oven to 450° F. Spray baking dish with non-stick spray. I use Avocado or Coconut Oil. I put the oil in a cooking spray bottle I got on Amazon.
- Place salmon on the baking dish. Season with salt and pepper.
- Bake until cooked through, about 14 minutes.
- While salmon cooks, place chopped lettuce & onion in a bowl and toss with salad dressing. I used about 1/3 of a cup of dressing. Divide into four servings in bowls or on plates. *Chopped onion is optional, I like onions and feel it gives it some extra flavor!
- Top with a salmon filet, sun dried tomatoes and shredded Parmesan. Then enjoy!
Conclusion
