Sausage and Apple Stuffed Acorn Squash
This sounds more like a “fall” recipe. But I will guarantee this Sausage and Apple Stuffed Acorn Squash recipe is for anytime of the year! Today is a hot, windy day in June! But nice and cool in the house with the air conditioner on. So I decided to make this yummy recipe.
A Family Meal
The original recipe from Babbling with Brooke, was for three acorn squash. I only made two. I am giving you the original recipe in full with some of the tweaks I made. This recipe can be converted to Keto friendly too! Lets take a closer look at this tasty and filling easy dinner recipe!
Sausage and Apple Stuffed Acorn Squash
Ingredients
- 3 Acorn Squash, sliced in half
- 1 tbsp Olive Oil
- Salt/Pepper to taste
- 1 lb Sweet Italian Sausage
- 1 small Onion, finely chopped
- 2 large Apples, chopped *leave skin on
- 1 tbsp Rosemary
- 1 cup Italian Bread Crumbs *I used panko crumbs
- 1 cup Parmesan Cheese
- 2 tbsp Butter, melted
- 1 Celery Stick, chopped
Instructions
- Pre-heat oven to 400 degrees.
- Cut acorn squash in half. Remove seeds. Brush with olive oil. Season with salt and pepper to taste.
- Bake acorn squash face up for 1 hour.
- While acorn squash is baking, cook the sausage until there is no pink. Also, break up sausage so it is in small crumbles. Once cooked, add the onion and celery. Cook for an additional 5 minutes or until the onion becomes fragrant and translucent.
- Add apples pieces and cook for another 2 minutes until apples are softened.
- Add the Rosemary and 3/4 cup of the shredded Parmesan cheese. Cook until the cheese is melted.
- Once squash has finished baking, remove from oven and fill with sausage mixture. Sprinkle with breads crumbs and remaining Parmesan cheese. Drizzle melted butter over the top. Bake for another 15-20 minutes.
- Keto Friendly: don't add bread crumbs! And you have a Keto friendly meal!
- Be careful removing the acorn squash half's from the pan! They will be extremely hot and a little soft! I used two forks poked into either side to lift and place on a plate! Then enjoy!
Conclusion
Although this easy dinner recipe has a fall feel, it really is a great dish for anytime of the year. And extremely easy to make! And remember, this is a Keto friendly meal too! Just leave out the bread crumbs!

This makes me extra bummed about my apple allergy. It sounds like a great meal, but I’d either have to substitute that for another fruit, or leave it out – which kinda takes away a really necessary flavor. It’s too bad. This sounds so delicious. Enjoy it for me, okay?
