Shrimp Burrito Bowl

Healthy Shrimp Burrito Bowls is the second recipe in my meal prep series!  And it will not disappoint!  This recipe is packed with flavor and you can turn up the “heat” or make is mild.  It really is that easy!  The original recipe is from The Better Blondie.  The original recipe is Wholefood, Paleo and low carb.  I tweaked mine but as always, I make recipes according to mine and my families likings!  You can see the original recipe HERE!

Easy Variations

As with all recipes, I make sure I share ones that are easy to change and adjust.  This one is no different.  As I am new to meal prepping, I am sharing recipes created by others until I get a “handle” on creating my own.  But this recipe would be easy to trade out proteins.  Shrimp has some great health benefits that you can read about HERE!  But not everyone likes or can eat shrimp.  So feel free to trade out your protein for chopped cooked chicken or tofu.  I’m sure this would be great with shredded pork too!

Change the Heat on this Chipotle Burrito Bowl!

Another easy adjustment I did was the amount of Chipotle Powder used.  The original recipe called for 2 tablespoons.  That was a little too spicy for us!  However, 1 tablespoon still gave it a bang of flavor without making us drink several glasses of water during and afterwards! Even more sour cream did not cool down the spice factor!  So spice it up or not!  There is still plenty of flavor in this delicious Shrimp Chipotle Burrito Bowl!  Again, this is an easy shrimp burrito recipe that you can call your own by adjusting some of the ingredients!

Optional Additions

Feel free to add a slice of avocado, a dollop of sour cream or Greek yogurt to this too!  There are so many ways to make this the perfect dish just for you!  I purchased small “shot cups” to keep our sour cream in!  You can purchase them HERE from Amazon!

Shrimp Burrito Bowl

This is a wonderful Shrimp Burrito Bowl recipe that can be easily used as a meal prep recipe! Completed in less than an hour it is great for an easy weeknight dinner or meal prepped for your busy week ahead!

Ingredients

  • 1 lb Raw Shrimp peeled and deveined *I purchase frozen raw shrimp already prepped
  • 1 cup Uncooked Rice *use cauliflower rice for a healthier version. I used Jasmine Rice.
  • 1 tbsp Chipotle Powder *add more for extra spice!
  • 1 tsp Salt *or to taste
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Cumin
  • 1/4 tsp Onion Powder *I used onion granules
  • 2 medium Lime
  • 1 medium Avocado *optional
  • 1/2 cup Chopped Cilantro
  • 1 tbsp Avocado Oil *or oil of your choice
  • 12 oz Pico de Gallo *I get mine fresh from the local grocery store. You can also make your own!

Instructions

  • Cook rice according to the package. When done, add juice of one lime and lime zest. Also add 1/4 cup of fresh cilantro and mix until combined. Set Aside.
  • Combine Chipotle powder, cumin, salt, onion granules and garlic powder. Mix until well combined.
  • Rinse and pat dry shrimp with a paper towel. I chopped my shrimp into bite size pieces, you can also cook whole. Coat with the spice mixture. I tossed it all together in a large bowl.
  • Heat large skillet over medium heat. Add oil and cook shrimp pieces. For approximately 2 minutes on each side. They should be pinkish when cooked. try not to overcook, I know it can be hard!
  • Build your bowls! Rice on the bottom, then shrimp and top with Pico de Gallo. Garnish with fresh cilantro, avovado and sour cream or Greek yogurt! Then enjoy!

    This looks so delicious! Not to mention easy to make. I love shrimp and have never really tried it on a burrito bowl. For whatever reason, I’ve only had chicken or beef. I need to make this asap!
