It is colder and my slower cooker has been busy! I definitely use my slow cooker all year long, but the fall and winter is when I really love to use it! Comfort foods with a twist are some of my favorite meals to make. And this Slow Cooker Ranch Chicken Chili is on the top of my families favorite list! This is definitely a “pile in the ingredients” and forget it type of recipe!
Variations
As with everything I do, I try to give you different ideas on how to change up recipes so that you have options! I have made this recipe with canned corn vs frozen, just black beans rather than black and white beans. I have also used regular Mexican seasonings vs a Spicy Carne Asada seasoning. Serve with cornbread, a tortilla or over rice. All variations are delicious!

Slow Cooker Ranch Chicken Chili
Equipment
- Slow Cooker
Ingredients
- 1 lb Boneless Chicken Breast
- 1 medium Yellow Onion, chopped
- 1 8 oz bag Frozen Corn
- 1 15 oz can Black Beans
- 1 15 oz can White Beans
- 1 10 oz can Diced Tomatoes with Green Chilies
- 2 tbsp Ranch Dressing and Dip Mix *I use Hidden Valley Ranch and I have added upto 4 tbsp for a stronger ranch flavor.
- 1 tsp Spicy Carne Asada Seasoning
- 1 cup Water
- 1 8 oz package Cream Cheese
- Fresh Cilantro or chopped Poblano Pepper as Garnish *optional
Instructions
- Place chicken on the bottom of the slow cooker. I cook mine from frozen. Then add all remaining ingredients, except cilantro and cream cheese.
- Cook on low for 5-6 hours. With one hour remainig, take chicken out to shred then mix in with the ingredients until combined and place the block of cream cheese on top of the mixture.
- Cover and cook for another hour until the cream cheese is melted. Stir to combine the cream cheese. Serve and garnish with fresh cilantro,a chopped poblano pepper or diced tomoto. Then enjoy!
Crock Pot Cream Cheese Chicken Chili
Another version of this recipe is to omit the ranch dried dressing mix from the recipe. Then you will have a more traditional “white chili” with cream cheese recipe! For another great recipe CLICK HERE!
