Southwest Stuffed Sweet Potatoes
It was a Saturday afternoon during the pandemic, and I decided I didn’t feel like running for take out as I had originally planned. So I rummaged through our pantry and refrigerator to see what I could “whip up”! And here is where I decided to try something totally outside the norm of what I usually do and created Southwest Stuffed Sweet Potatoes! And I have to admit, I was impressed with how it turned out!
An Easy Dinner Recipe
Instead of taking the long road, I pulled out my Instant Pot. I had the sweet potatoes done in less than 30 minutes! So this recipe has the potential to be ready in under 30 minutes! Otherwise, you can use the oven to bake the sweet potatoes. But it takes about 45-60 minutes depending on the size of your potatoes.
Southwest Stuffed Sweet Potatoes
Equipment
- Instant Pot
Ingredients
- 2 Chicken Breast, cooked and shredded *you can also get a rotisserie chicken from the grocery store to save time!
- 6 Medium Size Sweet Potatoes
- 1 15 oz can Sweet Corn, drained
- 1 15 oz can Black Beans, drained
- 1 tbsp Minced Garlic
- 2 tbsp Olive Oil
- 1 tsp Paprika
- 1 tsp Cumin
- 1/2 tsp Chili Powder
- 1/4 cup Chopped Onion
- 2 Jalapeno Peppers, chopped and seeded *keep seeds if you would like more spice!
- 2 tsp Lime Juice, or the juice from one lime
- 1/2 cup Feta Cheese for garnish *optional
- 1/4 cup Fresh Cilantro, for garnish *optional
- Sour Cream, for garnish *optional
- 1 Avocado, diced for garnish *optional
Instructions
- Set your Instant Pot for high and place the sweet potatoes in the pot with one cup of water. Seal lid and cook for 20 minutes for medium size. If you have large or x-large then cook for 30-35 minutes.
- While the sweet potatoes are cooking, warm the olive oil in a large skillet. Add the garlic, jalapeno and onion. Cook about 5 minutes or until fragrant. Then add all spices, lime juice, corn, black beans and chicken to the skillet. Mix well and cook on a medium heat for about 15-20 minutes until heated through.
- Once the sweet potatoes are cooked, remove carefully from the Instant Pot and slice open one side. Squeeze open. I used a large wooden spoon to fill the sweet potato with filling. I garnished with fresh cilantro, Feta cheese, sour cream and diced avocado! And it was scrumptious!
- I used shredded chicken I had left over from another meal for this recipe. So it made a quick and easy dinner! You can also use shredded cheddar or pepper jack cheese instead of Feta. I literally looked in the pantry and refrigerator and used what I had on hand to create this recipe. I hope you enjoy it as much as we did!

Sometimes you just have to check out what ingredients you have and whip something up! And I am glad I did because these Southwest Stuffed Sweet Potatoes were not only delicious but healthy too! Seeing as though I’m allergic to white potatoes, I get extremely (unusually) excited about any recipe that includes sweet potatoes. This sounds truly delicious. And while I’d have to ditch the onion (another annoying allergy), I’m sure they’d taste divine anyways! Thanks for sharing!
