Steak and Sweet Potato Hash Sheet Pan Recipe
I am loving sheet pan recipes! They are fun and easy to make! I created this one with ingredients I had in the refrigerator and wanted to use up! And it turned out delicious! Tons of flavor, easy to make and in less than 40 minutes! So sit back and enjoy this sheet pan recipe that I know your entire family will enjoy! Steak and Sweet Potato Hash Sheet Pan Recipe
Ingredients
- 2 Sweet Potatoes, peeled and chopped
- 1/2 cup Olive Oil *hash
- 1 cup Red Onion, chopped *hash
- 1 tsp each Pepper, Onion Powder, Garlic Powder, Thyme and Paprika *hash
- 1 tsp Minced garlic *marinade
- 1/2 cup Zesty Italian Salad Dressing *marinade
- 3 tbsp Brown Sugar *marinade
- 3 tbsp Soy Sauce *marinade
- 1 tbsp Ground Ginger *marinade
- 2 lb Steak, sliced *I used a London Broil Steak
- 2 tbsp Melted butter *for green beans
- 1 lb Green Beans, cut into pieces
- Salt/Pepper to taste *for green beans
Instructions
- Preheat oven to 425 degrees
- Slice steak to your desired thickness and arrange in a pan for marinade. Combine Italian dressing, brown sugar, soy sauce, minced garlic and ground ginger. Combine thoroughly and pour over steak. Cover and set aside for 1-2 hours. If you have time and can make ahead, marinade overnight!
- In a medium bowl add olive oil and assorted seasonings. Stir until combined. Add sweet potatoes and chopped onion and mix until evenly coated with mixture. Spread evenly over shallow baking pan and cook for 10-15 minutes.
- Once sweet potatoes are done cooking at 425 degrees. Reduce the oven heat to 400 degrees. Move the sweet potato hash to one side of the baking pan. Place steak slices down the middle so they are not overlapping. Cook at 400 degrees for 5-8 minutes. **cooking depends on how thick your slices are and how well you like your steak. We like ours medium, so adjust the time cooked to your liking and remember, we still have green beans to cook too!
- Combine green beans, melted butter and salt/pepper in a bowl and mix well. Once steak is done cooking, add green beans to the baking pan and cook for another 5-7 minutes. Then enjoy!
