Fall has finally arrived in Colorado. It has been a long hot summer and I love the change of season. With that, I love using my Instant Pot! Don’t get me wrong, I love slow cooker and Instant Pot cooking all year long, but it is especially fun during the cooler months. So we have been having fun trying new and different Instant Pot recipes! This one I fashioned after a recipe we used to have when we had Hello Fresh delivered. With some modifications and adding my own spin, we have a fabulous Thai Pork Rice Bowl Recipe!
Hello Fresh Sweet Chili Pork Rice Bowl
The Hello Fresh recipe has some good options should you decide to modify your recipe. They added peanuts as a crunchy top. They also used ground pork. I had two 1 lb pork roasts in the freezer so I decided to use those. It made cooking a little longer and then I had to shred it, but sometimes we just have to use what we have on hand!
And don’t forget, Hello Fresh does not use Instant Pots for cooking. So this was a lot of fun working to transform this recipe into an Instant Pot one!

We rarely eat Thai food. But I have to say, all the Thai Pork Recipes I saw while researching how to create an amazing Thai meal all sounded delicious and amazing. Thai themed meals are something I will definitely be looking more into!
Easy Week Night Thai Pork!
This is an easy week night Thai Pork Recipe! I literally stacked my ingredients in the pot, poured the sauce over the top and sealed it. It cooked for 20 minutes in the Instant Pot. After that I shredded the pork roasts and mixed thoroughly in the sauce. I served it over Jasmine Rice that I cooked with lime juice and added fresh cilantro after cooking.
Instant Pot Thai Pork Rice Bowls
Equipment
- 1 Pressure Cooker
Ingredients
- 2 1 lb Pork Tenderloins *you could use ground pork too. Reduce your cooking time on the pressure cooker to half.
- 1 8 oz Container of sliced mushrooms *You can also substitute shiitake mushrooms.
- ¼ cup Soy Sauce *I use reduced sodium whenever possible
- 4 Limes *2 limes are for garnish. 2 will be juiced for the dish. You can also use Lime Juice concentrate too..
- 1 tsp Ground Ginger *you can use gresh or I use Roasted Ground Ginger for a little extra "pop"
- 1 tsp Sriarcha Sauce *add more for more spice, or eliminate for milder flavor.
- Green Onions and fresh Cilantro *optional for garnish only
- 4-6 servings Cooked Rice, cooked according to package directions *I use Jasmine Rice
Instructions
- Rub a small amount of oil on the pork and place in the bottom of a 6 quart electric pressure cooker. I have an Instant Pot. Top with sliced mushrooms, onion and red pepper. In a separate bowl, combine hoisin sauce, sweet chili sauce, soy sauce lime juice from 2 limes, garlic and ginger. Whisk until well blended and our over vegetables and pork in cooker.
- Lock lid and close the pressure release valve. Cook on high for 20 minutes.
- While pork is cooking, prepare you rice according to package directions. This makes 4-6 good size portions. When rice is done, set aside.
- When pork is done cooking, you can either let the cooker release naturally or you can do a quick release. I personally do a quick release. Remove pork and shredded with forks. Return to the cooker and mix well with sauce and other ingredients.
- Serve over cooked rice and garnish with lime wedges, chopped green onion and cilantro leaves! Then enjoy! Leave the Sriracha on the table for those that like extra "heat" and spice!
Additional Instant Pot Tricks and Tips!
- Unless your recipe instructs otherwise, always have a t least 1 cup of liquid when cooking under pressure. Any less will not generate enough steam.
- Never fill pot more than two-thirds full to allow enough room for steam to build. Or more than half for rice or beans to give them room to expand.
- Cook times start when pot reaches full pressure, not from the moment at which the program button was pressed. So be sure to account for that time when deciding when to start your meal preparations!
- When switching between cooking programs, always press the CANCEL button before selecting a new function.
- Before using the saute function, let the Instant Pot get hot, which will take about 5 minutes. But don’t put the lid on while it’s heating or at any time during the saute function.
