Ingredients
1/2cupApple Cider Vinegar
1/2cupHoney
1cupKetchup
4tbspUnsalted Butter, melted
2tspGarlic Salt
2Garlic Cloves, minced
8Boneless, Skinless Chicken Thighs*I used 4 medium boneless chicken breast, cubed
1tbspVegetable Oil
1/2tspKosher Salt
1/2tspBlack Pepper
2cupsCubed, Fresh Pineapple
1 1/2cupsRed Bell Pepper Strips
1tbspMinced Fresh Parsley
1tbspToasted Sesame Seeds*I skipped the Sesame Seeds
Cooked Rice for Serving
Instructions
Position oven rack 6 inches from the broiler element and preheat the oven to 400 degrees.
In medium bowl, whisk together vinegar, honey, ketchup, melted butter, garlic salt and garlic until well combined.
Place chicken thighs on one side of a sheet pan and pat them dry. Drizzle with oil and sprinkle with salt and pepper. Bake for 15 minutes.
Remove from oven and place pineapple and red pepper strips on the other end of the baking sheet. Baste chicken with 1/2 cup of the sauce ad bake for 10 minutes.
Turn the oven to broil (do not remove the pan) and broil until the chicken is charred in several places. 8 to 10 minutes.
Transfer the chicken, pineapple and peppers to a large bowl and toss with 1/2 cup of the remaining sauce. Use remaining sauce for those who would like more!
Store in airtight container for 3 to 5 days and enjoy!!!
