Magnolia Table's Honey Garlic Chicken Recipe

I have been sharing some of my favorite recipes from Magnolia Table's Volume 2 cookbook. This one is a winner and the last I will be sharing for a while! I hope you enjoy!

Ingredients

  • 1/2 cup Apple Cider Vinegar
  • 1/2 cup Honey
  • 1 cup Ketchup
  • 4 tbsp Unsalted Butter, melted
  • 2 tsp Garlic Salt
  • 2 Garlic Cloves, minced
  • 8 Boneless, Skinless Chicken Thighs *I used 4 medium boneless chicken breast, cubed
  • 1 tbsp Vegetable Oil
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 2 cups Cubed, Fresh Pineapple
  • 1 1/2 cups Red Bell Pepper Strips
  • 1 tbsp Minced Fresh Parsley
  • 1 tbsp Toasted Sesame Seeds *I skipped the Sesame Seeds
  • Cooked Rice for Serving

Instructions

  • Position oven rack 6 inches from the broiler element and preheat the oven to 400 degrees.
  • In medium bowl, whisk together vinegar, honey, ketchup, melted butter, garlic salt and garlic until well combined.
  • Place chicken thighs on one side of a sheet pan and pat them dry. Drizzle with oil and sprinkle with salt and pepper. Bake for 15 minutes.
  • Remove from oven and place pineapple and red pepper strips on the other end of the baking sheet. Baste chicken with 1/2 cup of the sauce ad bake for 10 minutes.
  • Turn the oven to broil (do not remove the pan) and broil until the chicken is charred in several places. 8 to 10 minutes.
  • Transfer the chicken, pineapple and peppers to a large bowl and toss with 1/2 cup of the remaining sauce. Use remaining sauce for those who would like more!
  • Store in airtight container for 3 to 5 days and enjoy!!!
