Slow Cooker Ranch Chicken Chili

This is an easy slow cooker recipe that your family will request again and again!

Ingredients

  • 1 lb Boneless Chicken Breast
  • 1 medium Yellow Onion, chopped
  • 1 8 oz bag Frozen Corn
  • 1 15 oz can Black Beans
  • 1 15 oz can White Beans
  • 1 10 oz can Diced Tomatoes with Green Chilies
  • 2 tbsp Ranch Dressing and Dip Mix *I use Hidden Valley Ranch and I have added upto 4 tbsp for a stronger ranch flavor.
  • 1 tsp Spicy Carne Asada Seasoning
  • 1 cup Water
  • 1 8 oz package Cream Cheese
  • Fresh Cilantro or chopped Poblano Pepper as Garnish *optional

Instructions

  • Place chicken on the bottom of the slow cooker. I cook mine from frozen. Then add all remaining ingredients, except cilantro and cream cheese.
  • Cook on low for 5-6 hours. With one hour remainig, take chicken out to shred then mix in with the ingredients until combined and place the block of cream cheese on top of the mixture.
  • Cover and cook for another hour until the cream cheese is melted. Stir to combine the cream cheese. Serve and garnish with fresh cilantro,a chopped poblano pepper or diced tomoto. Then enjoy!
