This is a wonderful Shrimp Burrito Bowl recipe that can be easily used as a meal prep recipe! Completed in less than an hour it is great for an easy weeknight dinner or meal prepped for your busy week ahead!
1lbRaw Shrimp peeled and deveined*I purchase frozen raw shrimp already prepped
1cupUncooked Rice*use cauliflower rice for a healthier version. I used Jasmine Rice.
1tbspChipotle Powder*add more for extra spice!
1tspSalt*or to taste
1/2tspGarlic Powder
1/4 tspCumin
1/4tspOnion Powder*I used onion granules
2mediumLime
1mediumAvocado*optional
1/2cupChopped Cilantro
1tbspAvocado Oil*or oil of your choice
12ozPico de Gallo*I get mine fresh from the local grocery store. You can also make your own!
Instructions
Cook rice according to the package. When done, add juice of one lime and lime zest. Also add 1/4 cup of fresh cilantro and mix until combined. Set Aside.
Combine Chipotle powder, cumin, salt, onion granules and garlic powder. Mix until well combined.
Rinse and pat dry shrimp with a paper towel. I chopped my shrimp into bite size pieces, you can also cook whole. Coat with the spice mixture. I tossed it all together in a large bowl.
Heat large skillet over medium heat. Add oil and cook shrimp pieces. For approximately 2 minutes on each side. They should be pinkish when cooked. try not to overcook, I know it can be hard!
Build your bowls! Rice on the bottom, then shrimp and top with Pico de Gallo. Garnish with fresh cilantro, avovado and sour cream or Greek yogurt! Then enjoy!
