Hummus and Vegetable Sandwich

This is an easy meal prep recipe that can be made with a protein or not! So many options and delicious as always! Whether you need lunch, dinner or a snack!

Ingredients

  • 6-10 slices Fresh Turkey Breast *I buy Boar's Head brand.
  • 1 tub Roasted Red Pepper Hummus *you can use any flavor of hummus or make your own. This is just my preference
  • ½ cup Roasted Red Peppers, drained and cut into strips
  • cup Feta Cheese
  • 2 Mini Cucumbers, sliced **I use mini cucumbers to avoid seeds. Just slice and eat!
  • 1 box 100% Whole Wheat Sandwich Thins
  • 6 pieces Fresh Lettuce, *I used Butter Lettuce leaves

Instructions

  • Assemble all the ingredients on each sandwich thin according to your liking! If you want a protein, put it on! If not, leave it off! Either way it will be a delicious alternative!
  • I store each sandwich in a Ziploc bag! When you take it make sure you have it in a cooler with an ice or put it in a refrigerator until you are ready to eat!
