Chocolate Chip Zucchini Bread Recipe

Ingredients

  • 3 cups All purpose floour
  • 1/2 tsp Baking powder
  • 1 tsp Salt
  • 1 tsp Nutmeg
  • 1 tsp Cinnamon
  • 1 tsp Baking Soda
  • 3 large Eggs
  • 1 1/2 cups Sugar
  • 1 cup Vegetable oil
  • 2 tsp Vanilla extract *I only use only pure extracts for all my recipes
  • 2 cups Shredded zucchini *2 small zucchini
  • 1/2 cup Pecan chips
  • 1 11.5 oz bag Milk Chocolate Chips *1.5 cups of semi sweet mini chips can be substituted

Instructions

  • Preheat oven to 350 degrees.  Grease AND flour 2 loaf pans, set aside.
  • Sift together flour, baking powder, salt, spices and baking soda in a medium bowl and set aside.
  • In a large bowl, beat eggs until light and fluffy.  Then add sugar and beat on low until "THICKENED", otherwise your chips will sink to the bottom of the loaf pan!  
  • Beat in oil, vanilla, zucchini, pecans and chocolate chips! Mix until blended. Mix in sifted (dry) ingredients. 
  • Divide batter evenly between the loaf pans.  And bake for 45-50 minutes.  Let cool before slicing.  Then enjoy!
