Ingredients
4tbspUnsalted Butter
3tbspFlour
2tbspMinced Garlic
1cupMilkI used 2%
1/2cupChicken Broth
1cupShredded Parmesan Cheese
1cupDiced HamI purchase an 8 oz bag of diced organic ham at my grocery store
Freshly Ground Black Pepper to Taste
116 ozPackage Frozen Cheese Tortellini
2cupsChopped Spinach
Instructions
Cook tortellini according to directions and set aside.
Melt butter in large pan, add minced garlic and saute until fragrant. Add flour and pepper, stir until smooth. Add milk and chicken broth. Bring to a boil while stirring constantly. Add additional chicken broth if you would like a thinner sauce. Add 3/4 cup of shredded Parmesan and stir until melted.
Add cooked tortellini and mix until pasta is covered. Stir in chopped spinach, cover and let stand for 2-3 minutes until spinach is wilted. Garnish with remaining shredded Parmesan cheese.
