Chocolate Chip Zucchini Bread Recipe
I have been making chocolate chip zucchini bread for as long as I can remember. And this has been my families favorite. This is an adaptation from a recipe I originally got from Paula Deen at the Food Network, in 2008. So yes, I have put my own spin on this yummy recipe. The original recipe, which you find in the link below, was very sweet. Almost too sweet for our family. So I reduced the sugar amount and increased the spices! And we love it! Chocolate chip zucchini bread never looked or tasted so good! I hope you enjoy it as much as we do! Chocolate Chip Zucchini Bread Recipe
Ingredients
- 3 cups All purpose floour
- 1/2 tsp Baking powder
- 1 tsp Salt
- 1 tsp Nutmeg
- 1 tsp Cinnamon
- 1 tsp Baking Soda
- 3 large Eggs
- 1 1/2 cups Sugar
- 1 cup Vegetable oil
- 2 tsp Vanilla extract *I only use only pure extracts for all my recipes
- 2 cups Shredded zucchini *2 small zucchini
- 1/2 cup Pecan chips
- 1 11.5 oz bag Milk Chocolate Chips *1.5 cups of semi sweet mini chips can be substituted
Instructions
- Preheat oven to 350 degrees. Grease AND flour 2 loaf pans, set aside.
- Sift together flour, baking powder, salt, spices and baking soda in a medium bowl and set aside.
- In a large bowl, beat eggs until light and fluffy. Then add sugar and beat on low until "THICKENED", otherwise your chips will sink to the bottom of the loaf pan!
- Beat in oil, vanilla, zucchini, pecans and chocolate chips! Mix until blended. Mix in sifted (dry) ingredients.
- Divide batter evenly between the loaf pans. And bake for 45-50 minutes. Let cool before slicing. Then enjoy!
