Easy Flatbread Recipes
My husband and I love varieties of flatbreads. When we go out to eat, if there is a flatbread option on the menu, we order it! So when I saw a blueberry goat cheese flatbread recipe by Midwest Foodie Blog, I had to try it. And it did not disappoint! Of course, I made it “my own” with a few changes, but this is my version of an easy Blueberry Goat Cheese Flatbread Recipe that I think you will love!
Healthy Flatbread Recipes
Not all flatbread are the same. I use Stonefire Authentic Flatbreads for my crust. You can make your own, however, I am all about convenience. And the Stonefire brand has no artificial preservatives. You can also make it crispier or softer depending on how you cook it. I like to cook my flatbread on the rack first, then add all my toppings and place it on a baking stone and cook a second time. King Arthur Baking Company also has a flatbread mix to make your own crust. I have not tried it, but it looks like it is a good buy and has very good reviews.
Flatbread Recipe Variations
There is an endless combination of flatbreads you can make. I have made my own up “on the fly” based on ingredients I had in my refrigerator that I needed to use! Food is too expensive to waste! So I will always have some flatbread crusts on hand for last minute snack or dinner ideas! Here are some suggestions and combinations I have tried in the past!
- Sliced Roast Beef, Garlic Aioli, Arugula, Shredded Cheddar, Red Onion Slices
- Bacon, Fig, Goat Cheese, drizzle of honey
- Sliced Pear, Prosciutto, Blue Cheese Crumbles and Arugula, optional: Honey drizzle and a sprinkle of black pepper
- Basil Pesto Base, sliced fresh Mozzarella, Cherry Tomatoes and fresh Basil Leaves, Balsamic Glaze
- Shredded Rotisserie Chicken, BBQ Sauce, Shredded Mozzarella, Red Onion Slices, and fresh Cilantro. Optional: Ranch Dressing Drizzle
These are just to name a few! Your imagination can go wild and no ingredient is off limits!
Blueberry Goat Cheese Flatbread Recipe
Ingredients
- 1 Stonefire Flatbread
- 5 tbsp Apricot Jam
- 1 Lemon for zest
- 1 cup Crumbled Goat Cheese
- 1 cup Fresh Blueberries
- ½ cup Fresh Basil Slivers
- Honey Drizzle, optional
Instructions
- Preheat oven to 450 degrees.
- Place flatbread directly on the oven rack and cook for 5-6 minutes for a crispier crust. This is how I like to make mine.
- Once I have baked my flatbread, I place it on a cooking stone and add all my toppings. I spread the apricot jam on the flatbread first. Then I layer with the blueberries and goat cheese. I top off it off with lemon zest and fresh basil.
- Cook on 450 degrees for another 6 minutes or until melted and slightly browned. You can also put this under the broiler for a couple minutes. Garnish with more fresh basil and a drizzle of honey if desired. I think it is perfect without the honey, but you can decide for yourself! Then enjoy!

I’m excited to make flatbreads! They are amazing because you can put almost anything on them, and they just melt in your mouth. While I’m not a fan of blueberries and goat cheese, I can’t wait to experiment with savoury herbs and vegetables.
