Blueberry Goat Cheese Flatbread Recipe

This is an easy and tasty flatbread recipe that can be ready in less than 20 minutes! So for an after school snack or an easy lunch, this has you covered!

Ingredients

  • 1 Stonefire Flatbread
  • 5 tbsp Apricot Jam
  • 1 Lemon for zest
  • 1 cup Crumbled Goat Cheese
  • 1 cup Fresh Blueberries
  • ½ cup Fresh Basil Slivers
  • Honey Drizzle, optional

Instructions

  • Preheat oven to 450 degrees.
  • Place flatbread directly on the oven rack and cook for 5-6 minutes for a crispier crust. This is how I like to make mine.
  • Once I have baked my flatbread, I place it on a cooking stone and add all my toppings. I spread the apricot jam on the flatbread first. Then I layer with the blueberries and goat cheese. I top off it off with lemon zest and fresh basil.
  • Cook on 450 degrees for another 6 minutes or until melted and slightly browned. You can also put this under the broiler for a couple minutes. Garnish with more fresh basil and a drizzle of honey if desired. I think it is perfect without the honey, but you can decide for yourself! Then enjoy!

Notes

The above ingredients are suggested measurements.  I use what I have available and sometimes I have a little more goat cheese, other times I have a little more blueberries!  Make the recipe your own!
