Garlic Shrimp and QuinoaGarlic Shrimp with Peas & Quinoa

What do you do when you have shrimp and quinoa, but no sure what to do with it?  You rummage through the refrigerator and figure out a new recipe! Although this was a “let’s try it and see” recipe!  In conclusion, it turned out to be very good!!  Here is a great easy dinner recipe of garlic shrimp with peas and quinoa! I hope you enjoy!

Garlic Shrimp with Peas & Quinoa

Ingredients

  • 2 lbs Jumbo Shrimp I use raw with tails on
  • 1/2 cup Chopped Onion
  • 3 tbsp Minced Garlic
  • 1 13 oz bag Tri-Color Quinoa Or 2 cups
  • 8 tbsp Salted Butter
  • 1 tsp each Salt and Pepper Or to taste
  • 2 tsp Red Chili Pepper
  • 4 cups Chicken Broth

Instructions

  • Melt 1 tbsp of the butter in a large pot.  Saute chopped onion and half of garlic, stirring regularly, for 5 minutes.  Or until chopped onions are translucent.  
  • Add salt, pepper and 1 tsp of the red chili pepper.  Mix well.  Add quinoa and cook for approximately 2 minutes while stirring regularly. Then add chicken broth bring to a boil and cover.  Simmer for 20 minutes.  
  • Meanwhile, melt the remaining butter in another pot.  Add remaining red chili pepper and remaining garlic.  
  • Once butter is fully melted, add shrimp, peas and saute until all shrimp/peas are cooked thoroughly.  Shrimp will no longer be translucent and turn white/pink.  
  • When quinoa is fully cooked it will be soft and fluffy.  Mix shrimp, peas and butter mixture with the quinoa and mix until well blended.  Let sit for 5 minutes before serving.  Mix again prior to serving.  I hope you enjoy!!

    This looks yummy, I want to try but I probably substitute with brown rice. I’ve tried quinoa and the texture doesn’t agree with my palate.☺

      Brown rice would be a great option! Honestly, when I did this recipe it was to use up items I had on hand! =)

    Super easy to make. I added celery and seasoned my shrimp with Old Bay and garlic powder. Loved !!
