Melt 1 tbsp of the butter in a large pot. Saute chopped onion and half of garlic, stirring regularly, for 5 minutes. Or until chopped onions are translucent.
Add salt, pepper and 1 tsp of the red chili pepper. Mix well. Add quinoa and cook for approximately 2 minutes while stirring regularly. Then add chicken broth bring to a boil and cover. Simmer for 20 minutes.
Meanwhile, melt the remaining butter in another pot. Add remaining red chili pepper and remaining garlic.
Once butter is fully melted, add shrimp, peas and saute until all shrimp/peas are cooked thoroughly. Shrimp will no longer be translucent and turn white/pink.
When quinoa is fully cooked it will be soft and fluffy. Mix shrimp, peas and butter mixture with the quinoa and mix until well blended. Let sit for 5 minutes before serving. Mix again prior to serving. I hope you enjoy!!
