Jalapeno Popper Chicken Casserole
I have been wanting to try this Jalapeno Popper Chicken Casserole for months! It is probably one of the most popular Pins on Pinterest! I originally saw this recipe made by Eatwell 101 about a year ago. With the quarantine still in place, I decided now was as good a time as any to get it done! And I am so glad I did! Because it was quick, easy and delicious! Ready to serve in 30 minutes (start to finish) it is an easy dinner recipe for you and your family!

This Jalapeno Popper Chicken Casserole is gluten free, low carb and keto friendly! What more can you ask for? Good for you and yummy!
Jalapeno Popper Chicken Casserole
Ingredients
- 2 lbs Cooked and Shredded Boneless Chicken Breast, 4-5 chicken breast *use a roasted chicken from your local grocery store to save time!
- 8 oz Cream Cheese, softened
- 1 tbsp Garlic Powder
- 1 tbsp Paprika
- Ground Pepper, to taste
- 1/2 cup Heavy Cream
- 1/4 cup Chicken Broth
- 5 Jalapeno Peppers
- 1 cup Sharp Cheddar Cheese, grated
- 8 slices Pre-cooked Bacon, chopped
Instructions
- Preheat your oven to 375 degrees.
- In a 9' x 13' baking dish place all the shredded chicken in an even layer on the bottom of the pan.
- Whisk together heavy cream, chicken broth and softened cream cheese until smooth. Spread mixture evenly over the chicken.
- Take garlic powder, ground black pepper and paprika and evenly sprinkle over the cream cheese mixture.
- Cut the jalapeno peppers into long strips. If you want a spicier dish, leave the seeds, milder remove the seeds. Lay the strips over the top of the cream cheese mixture and spicies. And remember to wash your hands afterwards!
- Take shredded cheese and sprinkler over the top of the entire casserole!
- Lastly, sprinkle the chopped bacon over the top and bake for 20 minutes at 375 degree! Then enjoy!
Conclusion
I served this with a side salad and it was amazing! The original recipe you can find here at Eatwell 101. However, I increased the spices from the original recipe and felt the spices would be better if applied after putting the cream cheese layer on. It is definitely going to be a new favorite at our house! I hope your family loves it as much as we did!
