Air Fryer Rosemary Garlic Potato Wedges Recipe

For months now I have been going back and forth on whether I should buy an air fryer.  I finally decided to purchase the air fryer lid to go with my 6 quart Instant Pot.  This Air Fryer Rosemary Garlic Potato Wedges Recipe is my first try with my new found appliance!  And I have to admit, I was pretty impressed with it and glad I finally took the plunge!

Potato Types

I personally love red potatoes or Yukon Gold.  Both have a thin skin that I leave on for the added flavor, crispy texture when roasted and the extra nutritional value of the skin.  You can use any type of potato for this recipe, I just happen to have a bag of fresh red potatoes from our local farmer’s market!

Air Fryer Rosemary Garlic Potato Wedges Recipe

This is my first run at an Air Fryer Recipe, and I have to admit, these were a very delicious snack!
Prep Time15 minutes mins
Cook Time30 minutes mins
Total Time45 minutes mins
Course: Side Dish, Snack

Equipment

  • 6 quart Instant Pot
  • Instant Pot Air Fryer Lid

Ingredients

  • 8-9 Red Potatoes, cut into wedges
  • 1 tbsp Olive Oil
  • 1 tbsp Rosemary *I used Pampered Chef Rosemary Herb Spice mix for extra flavor
  • 1 tsp Garlic Powder *You can use more if you want a stronger garlic flavor
  • 1/8 tsp White Pepper *You can use black pepper instead
  • 1/8 tsp Salt

Instructions

  • Wash and pat dry the potatoes. Then cut into wedges. Place in a bowl and set aside.

  • Pour 1-2 tbsp of olive oil into a small bowl. Add all spices and mix thoroughly.

  • Pour oil/spice combination over potato wedges and mix until coated.
  • Place coated potato wedges into air fryer. If you have the air fryer lid for the Instant Pot. Be sure to place the air fryer bowl in the Instant Pot, then add the wedges. Do not plug in the Instant Pot! Just plug in the lid attachment and turn on. Set for 15 minutes.

  • After 15 minutes mix up the potatoes and cook for another 15 minutes.
  • When done serve with ranch dressing and ketchup! Enjoy!

Conclusion

These potato wedges were a wonderful autumn afternoon snack!  Make them for a fun get together or just for the family!  Either way I hope you and your family enjoy them as much as we did!

    Wait, there’s an air fryer lid for instant pot?? I haven’t gotten an air fryer because I don’t have room for another big appliance, but if I can get a lid to go with the instant pot I already have that could be a game changer. I also love anything with rosemary so these potatoes sound amazing.

    I got an air fryer a few months ago and used it a lot the first few weeks, but not so much lately. This is a perfect recipe to try and get me back into using it!

    I am DYING for an air fryer, but all the good ones are sold out! Sure, you can get the plain ones that just do chips, but there’s some amazing ones out there that can do whole chickens AND bake stuff AND dehydrate things too, and every time we go to buy them, they’re all gone 😩 In the meantime though, I think I might break down and get a regular one because I *am* a huge fan of wedges and these look SO good, I’d love to get them a try 😋

    In south Africa, we call these “sweet potatoes”. I love the simplicity of this recipe, but I don’t have an air-fryer or the lid (just the Instant Pot). How would these come out in an oven?

      I think it would come our great in the oven too!! Cook 425 degree for 20 min? A little longer depending on the size of your wedges.

    I have made a lot of potato wedges but I have never attempted making them without peeling them first. Still looks delicious.

      I would never do russet potatoes without peeling, however, red and yukon gold I leave the skin on all the time. They are delicious!

    Ahhh! I’m so glad I came across this post. I’ve been back and forth on the whole air fryer thing, too. Do I really need another appliance? Then I saw IP air fryer lid. I put it on my wish list, but happy to hear a first hand account before I decide to buy. Guess it may be worth it!

    Ooh I love potatoes, any way they are cooked! I usually end up defaulting to mashing them, because it’s so easy, but this recipe looks really simple too. I really need to use my air fryer more!
