Growing up my mom used to make a traditional apricot chicken recipe using chicken legs. As I am not a big fan of anything with bones I decided to try my hand at an apricot chicken recipe my momma would be proud of! It took a couple of tries, but I love this recipe! Traditional Apricot Chicken Recipe Variations
You can try different variations to this recipe and make it your own. Change the protein from chicken to pork, add pineapple or mandarin orange slices too! I always suggest customizing recipes to fit you and your families tastes or dietary needs. It takes a little time to get used to using different spices or ingredients, but once you get used to it, your family will love you for it!
Apricot Sauce for Chicken, Apricot Jam Chicken
Another name for this could be an apricot sauce for chicken recipe. Or you could use the sauce on full size chicken breast pieces. Pour the apricot sauce for chicken over the chicken breast in a baking dish and bake it instead. Serve with rice, or a salad and vegetables! There is no wrong way to serve this delicious recipe!
Apricot Chicken Recipe
Ingredients
- 1.5 Lbs Boneless Chicken Breast, cut into cubes
- 1 18 oz jar Apricot Preserves
- 3 Tbsp Soy Sauce, *I use reduced sodium
- 1 Tsp Minced Garlic *feel free to use more if you would like a stronger garlic flavor
- 1 Tsp Ground Ginger
- ! Medium Bell Pepper, chopped *I used a red bell pepper
- 4 Cups Long Grain Rice, cooked
- Crushed Red Pepper Flakes *optional
- Chopped Green Onions for garnish *optional
- Pineapple chunks, mandarin organic wedges or snow peas can also be used! *optional
Instructions
- Cook rice according to the package while preparing the chicken and apricot sauce.
- Spray a small amount of cooking oil in a medium pan. Place chicken chunks in pan and cook on medium/high heat stirring regularly for 6-10 minutes.
- Once chicken is cooked, add apricot preserves, soy sauce, garlic, ginger and chopped bell pepper. Cook for 5-7 minutes or until hot and preserves are bubbling around the edges. Remove from heat.
- Once rice is cooked, divide it into 4 serving bowls. Divide chicken with apricot sauce evenly over the 4 servings of rice and enjoy! Garnish with a pinch of crushed red pepper flakes and chopped green onions!
