Apricot Chicken Recipe

This is an easy recipe that can be ready in less than 30 minutes. I am sure everyone will be asking for seconds!

Ingredients

  • 1.5 Lbs Boneless Chicken Breast, cut into cubes
  • 1 18 oz jar Apricot Preserves
  • 3 Tbsp Soy Sauce, *I use reduced sodium
  • 1 Tsp Minced Garlic *feel free to use more if you would like a stronger garlic flavor
  • 1 Tsp Ground Ginger
  • ! Medium Bell Pepper, chopped *I used a red bell pepper
  • 4 Cups Long Grain Rice, cooked
  • Crushed Red Pepper Flakes *optional
  • Chopped Green Onions for garnish *optional
  • Pineapple chunks, mandarin organic wedges or snow peas can also be used! *optional

Instructions

  • Cook rice according to the package while preparing the chicken and apricot sauce.
  • Spray a small amount of cooking oil in a medium pan. Place chicken chunks in pan and cook on medium/high heat stirring regularly for 6-10 minutes.
  • Once chicken is cooked, add apricot preserves, soy sauce, garlic, ginger and chopped bell pepper. Cook for 5-7 minutes or until hot and preserves are bubbling around the edges. Remove from heat.
  • Once rice is cooked, divide it into 4 serving bowls. Divide chicken with apricot sauce evenly over the 4 servings of rice and enjoy! Garnish with a pinch of crushed red pepper flakes and chopped green onions!
