Bacon and Garlic Smash Potatoes
I made these little beauties as a side dish. However, these little bacon and garlic smash potatoes would be a fabulous appetizer for a holiday party or Super Bowl Party!!! And I am sure if you make them, whether as a side dish or a yummy appetizer, your family and guests will be begging for more!
Getting Ready!
I decided to cook the potatoes in my Instant Pot first! And I am glad I did! It was fast, easy and I was able to get to the “good part” in under 20 minutes! So whether you decide to boil these little guys stove top or in the Instant Pot, they are scrumptious!
Bacon and Garlic Smash Potatoes
Ingredients
- 24 oz bag Petite Gold Potatoes
- 4 tbsp Melted Butter, unsalted
- Salt/Pepper to taste
- 1 tsp Garlic Powder
- 1 tsp Dried Parsley
- 1/4 cup Chopped Cooked Bacon
- 1/4 cup Shredded Cheddar Cheese
- 1/4 cup Chopped Green Onions or Chives
Instructions
- Preheat oven to 350 degrees.
- Cook potatoes in 1 cup of water for 8 minutes in Instant Pot. Drain and let cool enough for handle. Approximately 10 minutes.
- Once the potatoes are cool enough to handle, place them on a non-stick baking sheet. Then take a fork and lightly press down on each potato so that are slightly "flat". Season with salt and pepper.
- In small bowl combine melted butter, garlic powder and dried parsley.
- Using a small spoon, pour the seasoned butter mixture over each potato.
- Sprinkle chopped bacon, shredded cheddar and green onions evenly over the potatoes.
- Bake for 20 minutes and serve!

Well, I’m tragically allergic to white potatoes, so I couldn’t do this *exact* dish, but I’m sure it would be equally delicious with sweet potatoes! I’ll have to give that a try!
