Easy Bacon Wrapped Chicken with Brown Sugar Bourbon Glaze
If this is your first time visiting Colorado Kelly, my main objective when providing you with recipes for your family is to make sure they are easy to make. This recipe is no exception! In less than 30 minutes you will have this easy Bacon Wrapped Chicken with Brown Sugar Bourbon Glaze recipe on the table! It is definitely one of the easier recipes I have created and it is so very yummy!
Protein Variations
Although I used the brown sugar bourbon glaze for chicken, you can wrap shrimp with bacon and bake it with the glaze too. Or use the glaze by itself for ham. Either way, it is easy and delicious. There are many options if you just want to use the bourbon glaze. You can also wrap chicken thighs or legs, but be sure to adjust your cooking time for any variations! This is a great glaze to add variety to many different meals!
Bacon Wrapped Chicken with Brown Sugar Bourbon Glaze
Ingredients
- 4 Boneless Chicken Breast
- 8 Slices of thick cut bacon *I used thick cut but you can use any type of bacon
- 3 tbsp Butter
- 2 tsp Minced Garlic
- 1/2 cup Packed Brown Sugar
- 1/2 cup Crushed Pineapple or Pineapple Chunks *include any juice from the pineapple if using canned
- 1/2 cup Bourbon
- 1/4 cup Ketchup *this gives it a thicker texture
- 1/4 tsp Red Pepper Flakes *add more if you like more "spice"
- Salt/Pepper to taste
Instructions
- Pre-heat oven to 425 degrees.
- In small saucepan, melt butter and add minced garlic over medium heat. Cook until fragrant and garlic is turning a golden brown.
- Add brown sugar, bourbon, pineapple, ketchup, red pepper flakes and salt/pepper. Stir until well combined. Bring the mixture to a boil and reduce heat to simmer. Cook for about 5 minutes or until glaze thickens. Stir occasionally to keep from burning. Remove from heat and set aside.
- Clean and trim chicken breast. Then wrap with bacon slices. My bacon pieces wrapped around my entire piece of chicken. Feel free to use more than one piece of bacon per piece of chicken. If you need to, secure with toothpick.
- Place in baking pan when you have completed wrapping your chicken pieces. Then pour glaze on top of the chicken.
- Cook for 20-25 minutes. It may be less if your chicken pieces are on the thinner size. Mine happened to be quite thick. For the last 5 minutes, cook under broiler to get a crisper texture to the bacon and glaze! Then enjoy!
Conclusion
I had fun creating this recipe for you! I also sprinkled extra cut pineapple to the top of the chicken before cooking. It was delicious and easy to make, but it definitely has a dash of elegance that will surely impress your family! And don’t forget, you can certainly use the glaze for other proteins such as ham or shrimp! With another easy dinner recipe in the books I hope you family enjoys this Bacon Wrapped Chicken with Brown Sugar Bourbon Glaze Recpe!
