Bacon Wrapped Chicken with Brown Sugar Bourbon Glaze

Ingredients
4Boneless Chicken Breast
8Slices of thick cut bacon*I used thick cut but you can use any type of bacon
3tbspButter
2tspMinced Garlic
1/2cupPacked Brown Sugar
1/2cupCrushed Pineapple or Pineapple Chunks*include any juice from the pineapple if using canned
1/2cupBourbon
1/4cupKetchup*this gives it a thicker texture
1/4tspRed Pepper Flakes*add more if you like more "spice"
Salt/Pepper to taste
Instructions
Pre-heat oven to 425 degrees.
In small saucepan, melt butter and add minced garlic over medium heat. Cook until fragrant and garlic is turning a golden brown.
Add brown sugar, bourbon, pineapple, ketchup, red pepper flakes and salt/pepper. Stir until well combined. Bring the mixture to a boil and reduce heat to simmer. Cook for about 5 minutes or until glaze thickens. Stir occasionally to keep from burning. Remove from heat and set aside.
Clean and trim chicken breast. Then wrap with bacon slices. My bacon pieces wrapped around my entire piece of chicken. Feel free to use more than one piece of bacon per piece of chicken. If you need to, secure with toothpick.
Place in baking pan when you have completed wrapping your chicken pieces. Then pour glaze on top of the chicken.
Cook for 20-25 minutes. It may be less if your chicken pieces are on the thinner size. Mine happened to be quite thick. For the last 5 minutes, cook under broiler to get a crisper texture to the bacon and glaze! Then enjoy!
