EASY SPAGHETTI SQUASH RECIPE
Some easy dinner recipes are not only healthy, but full of flavor. While working on making healthier meals for my family, I love experimenting with spaghetti squash! And who doesn’t love buffalo chicken wings? I know my family does! So I saw somewhere in passing a buffalo chicken recipe with spaghetti squash and decide to create one myself! And I have to admit, it was good! Keto friendly too! And to help reduce time, I purchased a rotisserie chicken from the grocery store rather than cooking up two chicken breast and shredding them! Definitely a plentiful meal! I hope you enjoy it as much as we did! It is definitely a great easy dinner recipe! This recipe is not only satisfying to eat, but satisfying to make! It’s really fun to scrape out the spaghetti squash all while knowing this is a fantastic, healthy alternative to traditional pastas!! Using the buffalo sauce and rub, this recipe was the perfect amount of spice for my family, but you can adapt it however you’d like in order to please your family! You can also switch out the ranch for sour cream! Endless options for an overall delicious dish. Ingredients
- 2 Spaghetti Squash
- 3 Boneless Chicken Breast, cooked and shredded
- 2 tbsp Olive Oil
- 1/4 cup Chopped Onion
- 1/2 cup Buffalo Sauce *I used Sweet Ray's Buffalo Sauce
- 1 tbsp Buffalo Rub *optional
- 1/2 cup Ranch Dressing *or sour cream
- 1/2 cup Blue Cheese Crumbles *optional
- 1/4 cup Green Onions, chopped *optional
Instructions
- Preheat oven to 400 degrees.Slice spaghetti squash length wise and remove seeds & stringy center.
- Spray or brush olive oil on the "fleshy" side of the squash. Place face down on baking sheet and cook at 400 degrees for 40 minutes.
- Once baked, remove the spaghetti squash from the shell and place in a bowl with the chicken, buffalo rub, buffalo sauce and onions. Mix until thoroughly combined.
- Divide chicken/spaghetti squash mixture into the 4 empty shells. Drizzle ranch dressing evenly over the top of the stuffed squash shells and bake for another 15 minutes.
- Garnish with blue cheese and chopped green onions and enjoy!!
