Buffalo Chicken Spaghetti Squash Bake

This dish is easy to make, delicious, low-carb, and an overall hit!!

Ingredients

  • 2 Spaghetti Squash
  • 3 Boneless Chicken Breast, cooked and shredded
  • 2 tbsp Olive Oil
  • 1/4 cup Chopped Onion
  • 1/2 cup Buffalo Sauce *I used Sweet Ray's Buffalo Sauce
  • 1 tbsp Buffalo Rub *optional
  • 1/2 cup Ranch Dressing *or sour cream
  • 1/2 cup Blue Cheese Crumbles *optional
  • 1/4 cup Green Onions, chopped *optional

Instructions

  • Preheat oven to 400 degrees.
    Slice spaghetti squash length wise and remove seeds & stringy center.

  • Spray or brush olive oil on the "fleshy" side of the squash.  Place face down on baking sheet and cook at 400 degrees for 40 minutes.

  • Once baked, remove the spaghetti squash from the shell and place in a bowl with the chicken, buffalo rub, buffalo sauce and onions.  Mix until thoroughly combined.

  • Divide chicken/spaghetti squash mixture into the 4 empty shells.  Drizzle ranch dressing evenly over the top of the stuffed squash shells and bake for another 15 minutes.

  • Garnish with blue cheese and chopped green onions and enjoy!!
