Ingredients
2Spaghetti Squash
3Boneless Chicken Breast, cooked and shredded
2tbspOlive Oil
1/4cupChopped Onion
1/2cupBuffalo Sauce*I used Sweet Ray's Buffalo Sauce
1tbspBuffalo Rub*optional
1/2cupRanch Dressing*or sour cream
1/2cupBlue Cheese Crumbles*optional
1/4cupGreen Onions, chopped*optional
Instructions
Preheat oven to 400 degrees.Slice spaghetti squash length wise and remove seeds & stringy center.
Spray or brush olive oil on the "fleshy" side of the squash. Place face down on baking sheet and cook at 400 degrees for 40 minutes.
Once baked, remove the spaghetti squash from the shell and place in a bowl with the chicken, buffalo rub, buffalo sauce and onions. Mix until thoroughly combined.
Divide chicken/spaghetti squash mixture into the 4 empty shells. Drizzle ranch dressing evenly over the top of the stuffed squash shells and bake for another 15 minutes.
Garnish with blue cheese and chopped green onions and enjoy!!
