Cajun Orzo with Shrimp and Sausage

We love traditional Jambalaya. And I wanted to create something with the same great flavor but with a twist. As Jambalaya is a staple of New Orleans, I have made it in a slow cooker and stove top before.  But I think you will love this variation!  Using orzo instead of rice, this is a one pot wonder meal that is fast and easy.  And if I am being completely honest, the day after left overs, were even better!  So take a look at this easy Cajun Orzo with Shrimp and Sausage Recipe and tell me what you think!

Cajun Orzo with Shrimp and Sausage

This is a one pan wonder recipe that is ready in under an hour! Filled with lots of flavor and reminiscent of Jambalaya, it will be sure to please the entire family!

Ingredients

  • 2 tbsp Olive Oil
  • 1 small Yellow Onion, chopped
  • 1 medium Red Bell Pepper, chopped
  • 2 tbsp Minced Garlic
  • 12 oz Andouille Sausage, sliced
  • 12 large Uncooked Shrimp, cleaned with no shell/tail cut into bite size pieces
  • 2 14 oz cans Fire Roasted Diced Tomatoes
  • 1 1/2 cup Orzo
  • 1 14 oz can Chicken Broth
  • 1-2 tbsp Cajun Seasoning *use the 2 full tbsp if you want lots of spice!
  • 6 oz Cream Cheese, cut into cubes
  • Green onions for garnish

Instructions

  • Place a large deep dish skillet over a medium heat and add olive oil. Add onion, pepper and garlic. Cook until soft, about 5 minutes. Add sausage and shrimp and cook until warm and shrimp is almost cooked through. About 5 minutes.
  • Add orzo and stir to toast, about one minute. Add tomatoes, broth and Cajun seasoning. Season with salt and pepper to taste. Bring to a boil, then reduce heat and simmer. Stir occasionally, until orzo is tender. About 10-12 minutes.
  • Stir in cream cheese until melted and top with chopped green onions! Then enjoy!

Conclusion

You can put your own mark on this recipe by turning up the spice and adding some red pepper flakes, or add a third meat such as chicken.  No matter how you decide to make it, I hope you love this Cajun Orzo with Shrimp and Sausage Recipe!Next Sign
