Cajun Orzo with Shrimp and Sausage

This is a one pan wonder recipe that is ready in under an hour! Filled with lots of flavor and reminiscent of Jambalaya, it will be sure to please the entire family!

Ingredients

  • 2 tbsp Olive Oil
  • 1 small Yellow Onion, chopped
  • 1 medium Red Bell Pepper, chopped
  • 2 tbsp Minced Garlic
  • 12 oz Andouille Sausage, sliced
  • 12 large Uncooked Shrimp, cleaned with no shell/tail cut into bite size pieces
  • 2 14 oz cans Fire Roasted Diced Tomatoes
  • 1 1/2 cup Orzo
  • 1 14 oz can Chicken Broth
  • 1-2 tbsp Cajun Seasoning *use the 2 full tbsp if you want lots of spice!
  • 6 oz Cream Cheese, cut into cubes
  • Green onions for garnish

Instructions

  • Place a large deep dish skillet over a medium heat and add olive oil. Add onion, pepper and garlic. Cook until soft, about 5 minutes. Add sausage and shrimp and cook until warm and shrimp is almost cooked through. About 5 minutes.
  • Add orzo and stir to toast, about one minute. Add tomatoes, broth and Cajun seasoning. Season with salt and pepper to taste. Bring to a boil, then reduce heat and simmer. Stir occasionally, until orzo is tender. About 10-12 minutes.
  • Stir in cream cheese until melted and top with chopped green onions! Then enjoy!
