Ingredients
2tbspOlive Oil
1smallYellow Onion, chopped
1mediumRed Bell Pepper, chopped
2tbspMinced Garlic
12ozAndouille Sausage, sliced
12largeUncooked Shrimp, cleaned with no shell/tail cut into bite size pieces
214 oz cansFire Roasted Diced Tomatoes
1 1/2cupOrzo
114 oz canChicken Broth
1-2tbspCajun Seasoning*use the 2 full tbsp if you want lots of spice!
6ozCream Cheese, cut into cubes
Green onions for garnish
Instructions
Place a large deep dish skillet over a medium heat and add olive oil. Add onion, pepper and garlic. Cook until soft, about 5 minutes. Add sausage and shrimp and cook until warm and shrimp is almost cooked through. About 5 minutes.
Add orzo and stir to toast, about one minute. Add tomatoes, broth and Cajun seasoning. Season with salt and pepper to taste. Bring to a boil, then reduce heat and simmer. Stir occasionally, until orzo is tender. About 10-12 minutes.
Stir in cream cheese until melted and top with chopped green onions! Then enjoy!
