Grilled Angel Food Cake with Bourbon Fruit Sauce
If you are a frequent guest to my blog, you may have seen that I have been attending cooking classes at our local Williams-Sonoma store. And they have been fabulous! This is part TWO of my grilling series! For the class Alisa created a dessert of grilled pound cake. And it was yummy! But when I decided to make it at home, I wanted a “lighter” version. So I decided to make grilled angel food cake with my electric smokeless grill and see how it would turn out! And I have to say, it was amazing! Or at least that is what my hubby told me! He can be pretty easy to please though!!!
Seasonal Fruit
You can use any kind of fruit. The first time I tried this recipe at home, I used blueberries and strawberries. The second time I used fresh peaches and blueberries and it was define! But you can adjust this recipe to your liking just like I did!
Electric Smokeless Grill
Until I went to a cooking class, I had never heard of a smokeless grill. But after watching Alisa cook with it, I decided I had to have one! And I am so glad I purchased one off Amazon! It is amazing and doesn’t heat up the kitchen like the broiler of my oven would. And being outside in the hot summer sun isn’t an option for me either! Now lets get started on this delicious dessert, inspired by Martha Stewart’s Grilling cookbook!
Grilled Angel Food Cake with Bourbon Fruit Sauce
Ingredients
- 2 large Peaches, peeled and chopped *you can substitute strawberries or apricots
- 1 cup Blueberries *you can also use raspberries but they get a little mushy if cooked to long
- 2 tbsp Water
- 3 tbsp Sugar
- 2 tbsp Bourbon *I used Jack Daniels
- 2 tbsp Unsalted Butter, Melted
- 8 pieces Angel Food Cake *the Angel Food cake pieces I had were small, so I did 2 per serving. You can do 1 slice.
- 8 oz Vanilla Bean Ice Cream
Instructions
- Heat electric grill to medium-high.
- In a large sauce pan, combine sugar, bourbon and water. Cook on stove top, stirring occasionally, until sugar is dissolved. Add blueberries and peaches. Stir and cook until fruit is warmed through. Approximately 2-3 minutes. Let stand for 5 minutes.
- Use a pastry brush to lightly butter both sides of the angel food cake. Grill each slice for about 30 seconds to one minute on each side. *The original recipe called for 10 seconds each side but I did not feel that was long enough. So watch your cake slices and grill them to your liking!
- Serve topped with fruit mixture and ice cream then enjoy!!!
