Mexican Street Corn Recipe
I had only tried Mexican street corn one time prior to trying my hand at creating my own! That is how much I love it!! And I think it turned out great! Serve with chicken street tacos and fresh salsa for an amazing Mexican meal! This is also a wonderful recipe to take as a side dish. Whether it be to a bbq, family gathering or a potluck gathering, I am sure it will please! I hope you enjoy this Mexican Street Corn Recipe as much as my family did!
Mexican Street Corn
Ingredients
- 1 bag Frozen sweet corn, no sauce, thawed
- 1 tbsp Red Chili Pepper
- 1 tsp Crushed Garlic
- 1 Juice from 1 lime
- Salt/pepper to taste
- 2 tbsp Olive Oil Mayonnaise
- 2 tbsp Sour Cream
- 3 tbsp Fresh cilantro, chopped, no stems
- 1/4 cup Feta Crumbles *use less or to taste
Instructions
- Saute thawed corn in a hot skillet with vegetable oil, crushed garlic, red chili pepper, lime juice, salt/pepper and 2 tbsp of fresh cilantro. Saute for 5-8 minutes or until hot.
- While the corn is cooking, mix together mayonnaise, sour cream and remaining 1 tbsp of fresh cilantro.
- Once corn is cooked mix well with mayonaise and sour cream combination. Garnish with feta cheese and additional cilantro. Serve warm!
