Mexican Street Corn

Ingredients

  • 1 bag Frozen sweet corn, no sauce, thawed
  • 1 tbsp Red Chili Pepper
  • 1 tsp Crushed Garlic
  • 1 Juice from 1 lime
  • Salt/pepper to taste
  • 2 tbsp Olive Oil Mayonnaise
  • 2 tbsp Sour Cream
  • 3 tbsp Fresh cilantro, chopped, no stems
  • 1/4 cup Feta Crumbles *use less or to taste

Instructions

  • Saute thawed corn in a hot skillet with vegetable oil, crushed garlic, red chili pepper, lime juice, salt/pepper and 2 tbsp of fresh cilantro.  Saute for 5-8 minutes or until hot.   
  • While the corn is cooking, mix together mayonnaise, sour cream and remaining 1 tbsp of fresh cilantro.  
  • Once corn is cooked mix well with mayonaise and sour cream combination. Garnish with feta cheese and additional cilantro.  Serve warm!
