Sausage and Gouda Egg Bite Recipe
I will be the first to admit I LOVE going to Starbucks and getting their egg bites for breakfast. But they have a limited selection of flavors and I love trying new things! So I decided to make my own egg bite recipe with some flair and flavor! This is a combination I have used many times and is always a hit with my family! And it is definitely different than most egg bite recipes you find. These make ahead sausage egg muffins are perfect for a busy family! Re-heat for 25 seconds and you have a great breakfast on the go! Let’s see what it takes to have a great Sausage and Gouda Egg Bite Recipe!
Variations
As with all my recipes, I try to give you variations so you can customize the recipes to fit the tastes of you and your family. I have substituted bacon and cheddar with the recipe. If you are from the east coast, you know what pork roll is! And I have done pork roll with cheddar and chives too! Chives are usually a must for me, but everything else is a free for all! Sometimes my ingredients are based on what I have in my refrigerator and sometimes I am just in the mood for a certain flavor! But overall, these are a great snack or breakfast must have during busy weeks for the family!
Sausage and Gouda Egg Bite Recipe
Ingredients
- 13 Large Eggs, whisked
- 1 box Brown and Serve Sausage Patties, cooked and cut up *I microwave the entire box for 45 seconds. You can also use any type of healthy breakfast sausage or bacon! Just be sure to cook first!
- 1/2 cup Shredded Spinach *optional
- 1/4 cup Milk
- 1/2 cup Shredded Gouda Cheese *you can substitute shredded cheddar
- 1/4 cup Chives, chopped
- Ground Black Pepper to taste
Instructions
- Preheat oven to 350 degrees.
- Spray or grease muffin tin. I have a spray canola oil that works great. I would NOT suggest using muffin liners.
- Whisk eggs and milk together until frothy. Added chopped spinach, chives, ground pepper and mix until combined.
- Evenly distribute sausage pieces among the 12 greased muffin cups. Pour the egg mixture over the sausage until the muffin cups are about 1/2 to 2/3 full. Then sprinkle grated Gouda cheese evenly over the top.
- Bake for 20-25 minutes until egg bites are firm to the touch in the middle.
- Cool and store in air tight container for up to 5 days in refrigerator. To reheat, microwave for 25 seconds. It may take a little less or longer depending on the wattage of your microwave.
- Enjoy your easy, healthy breakfast on the go!
