Sausage and Gouda Egg Bite Recipe

We are super busy this time of year and having an easy, yet tasty breakfast is very important! Heat for 25 seconds and you have a warm and tasty breakfast on the go!

Ingredients

  • 13 Large Eggs, whisked
  • 1 box Brown and Serve Sausage Patties, cooked and cut up *I microwave the entire box for 45 seconds. You can also use any type of healthy breakfast sausage or bacon! Just be sure to cook first!
  • 1/2 cup Shredded Spinach *optional
  • 1/4 cup Milk
  • 1/2 cup Shredded Gouda Cheese *you can substitute shredded cheddar
  • 1/4 cup Chives, chopped
  • Ground Black Pepper to taste

Instructions

  • Preheat oven to 350 degrees.
  • Spray or grease muffin tin. I have a spray canola oil that works great. I would NOT suggest using muffin liners.
  • Whisk eggs and milk together until frothy. Added chopped spinach, chives, ground pepper and mix until combined.
  • Evenly distribute sausage pieces among the 12 greased muffin cups. Pour the egg mixture over the sausage until the muffin cups are about 1/2 to 2/3 full. Then sprinkle grated Gouda cheese evenly over the top.
  • Bake for 20-25 minutes until egg bites are firm to the touch in the middle.
  • Cool and store in air tight container for up to 5 days in refrigerator. To reheat, microwave for 25 seconds. It may take a little less or longer depending on the wattage of your microwave.
