Sheet Pan Steak Fajita Bowl Recipe
Any recipe that is easy and tasty has an opportunity to make it as a blog post! And this sheet pan steak fajita bowl recipe is no different! Sheet pan meals have become and easy dinner recipe favorite of mine. Not only because they are super easy to create, but they don’t use a lot of cooking utensils! The less the better in my opinion!
Choosing Your Meat
Normally, for a recipe like this I would marinate flank steak. And in the recipe that is the steak type I suggest. You can use any steak “cut” just make sure you marinate your cut of meat prior to cooking. I would suggest overnight, but if you don’t have that kind of time, then for at least 2 hours. The store did not have any flank steak available when I went shopping and so I bought a sirloin steak. Other cuts would have worked better, but I was low on options at the grocery store! So I made due with what I could get!
The Marinade
The marinade I decided to use was a grocery store brand (if you can believe it!) and it was fabulous! So for those that don’t have the Kroger brand Private Selection, any Mexican inspired Carne Asada Marinade should work fine! I found it in the steak sauce section of our grocery store! I also harvested fresh cilantro from my Tower Garden!
Sheet Pan Steak Fajita Bowl Recipe
Ingredients
- 1.5 lbs Flank Steak
- 3/4 cup Mexican Inspired Carne Asada Steak Sauce/Marinade
- 1 Medium Red Onion, Sliced
- 2 Bell Peppers, Sliced (1 each, Red and Green)
- 2 tbsp Olive Oil
- 2 tsp Cumin
- 1 tsp Chili Powder
- 1 tsp Salt
- 2 cups Brown Rice, cooked
- 1/2 cup Fresh Cilantro
- 2 limes Cut into Wedges
- 1/2 cup Feta Cheese Crumble *optional garnishment
- Guacamole, Sour Cream, Salsa *optional garnishment
Instructions
- Place flank steak in a zip lock bag and pour the marinade over it. Zip and refrigerate for 2-24 hours. Remove steak from refrigerator 30 minutes prior to cooking.
- Preheat oven to 400 degrees.
- Slice the onion and peppers.
- Then place in a bowl and add olive oil, cumin, chili powder and salt. Mix until all slices are evenly coated with olive oil and seasonings!
- Place on baking sheet and cook for 5 minutes.
- Once you have started the cooking process of your veggies, place the broiler on high. Push all the onion and pepper slices to one side of the baking sheet. Remove the steak from the marinade and place on the baking sheet.
- Broil for 5 minutes on each side or until the internal temperature reaches an internal temperature of 145 degrees Fahrenheit. Remove from oven and let the steak rest for 5 minutes.
- Thinly slice the steak against the grain.
- Toss cooked brown rice with juice from lime wedges and fresh cilantro leaves.
- Place rice on the bottom then top with steak slices and onions, peppers! Garnish with guacamole, sour cream and salsa if desired! Then enjoy!
