Slow Cooker Pot Roast Recipe
Wow, I cannot even believe where we are right now. With Covid-19 shutting down most of, if not all of the United States. We truly need to band together as a nation and show unity and kindness towards one another. With that said, I have taken a lot of time to reflect on my purpose and what God is trying to tell us during this time. But until I am ready (if ever) and to share my thoughts I will instead share my Slow Cooker Pot Roast Recipe instead! With being at home for over two weeks, I need to start getting a little more creative with my meals!!!
Side Dishes
I did two easy side dishes. The first was Yukon gold petite potatoes! 10 min on high in the Instant Pot with one cup of water and you have a quick and easy side dish. Add a little salt, pepper and butter to taste! And of course, a side salad goes with any main dish! At least that is my opinion!
Slow Cooker Pot Roast
Equipment
- Slow Cooker
Ingredients
- 4-5 lb Beef Round Roast
- 2 cans Condensed Cream of Mushroom Soup *10.75 ounce cans, I used Campbell's brand
- 1 envelope Dry Onion Soup Mix *1 ounce packet, I used Lipton's
- 1 cup Beef Broth
- 1/4 cup Red Cooking Wine
- 2 tbsp Olive Oil
- Salt/Pepper to Taste
Instructions
- Lightly spray your slow cooker with baking spray. I love using the disposable slow cooker bags, but spraying with cooking spray works too when I don't have the bags on hand!
- Browning your roast prior to cooking in the slow cooker is a personal preference. But I HIGHLY recommend it! It gives the roast an amazing texture and flavor!
- Warm the olive oil in a deep pot. Once warmed place the roast into the pot. Brown on medium heat for approximately 3-4 minutes on each side. Until lightly browned.
- While browning your meat, combine remaining ingredients in a small bowl. Whisk until smooth.
- Once you have browned your meat, place it in the slow cooker. Pour the gravy mixture over the top. Cook on high for 2.5-4 hours. I had a 4.06 lb roast and it was perfectly cooked in less than 3 hours.
- The gravy that cooks with roast is amazing! No need to do anything extra as it is rich and thick all on its own!
- Once your roast is cooked to your preference, ENJOY!
